I love chinese fried rice, i have tried making it several times but it never turns out quite right, looks straight forward but think i must be missing something, any advice?

cold steamed rice
vegetable oil
soya sauce
garlic - finely diced - 2-3 big cloves
ginger - finely diced slightly less than the garlic
green chillies (you need 1-2 chillies)
onions - chopped fine
spring onions - cut diagonally
salt to taste
ketchup / chilli sauce to taste
veggies
meats
egg

Heat oil in a pan / wok
toss finely chopped green chillies, ginger and garlic into the pan and add a dash of soya sauce.
Add salt to taste.
You will get the distinct flavour.
Add the chopped onions and vegetables as per your preference and stir till the onion turns brown / colourless.
add more soya sauce if required. you can add ketchup or green or red chilli sauce as per your preference.
add the pre-cooked meats if you want any.
and let them warm a bit before you add the rice.
toss the whole mix till it is nice and hot.

You can toss in an egg too if you want.

You can add pretty much anything you like to freid rice... different veggies and meats and such (I like carrots, peas, and little shrimp). It is generally fried up along with an egg. I don't usually use soy sauce until I'm finished, then it can be added to taste. Best advice: the rice should obviously already be cooked, but let it dry out for a day or so. There should be little moisture left in it, it'll make a big difference!

Fried Rice

Ingredients

(10 servings)

1 c Uncooked rice
5 T Butter
1 c Chopped onion
1 c Chopped carrots
2/3 c Chopped scallions
3 T Sesame seeds
5 Eggs
5 T Soy sauce
Salt
Pepper


Instructions

Cook rice according to package directions. In a large skillet melt butter. Add onions, carrots and scallions. Saute until carrots are translucent. Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan. Bake until golden brown (10 to 15 minutes), shaking pan occasionally for even color. Lightly grease another skillet. Beat eggs. Pour into hot skillet. Cook as you would scrambled eggs. Combine rice, vegetables, sesame seeds and eggs. Add soy sauce. Stir. Salt and pepper to taste.

Chinese Fried Rice

Ingredients:
4 cups leftover cooked long grain rice
12 ounces cooked ham, beef, pork, shrimp or chicken
salt & pepper
3 tablespoons of soy sauce
2 tablespoons Chinese bead molasses
4 tablespoons oil, preferably peanut oil
1 green pepper, cut into julienne
1 regular size can bean sprouts, drained
6 green onions, sliced
6 eggs, slightly beaten


Directions:

Heat oil in large skillet. Add the green pepper and a little salt and pepper. Fry for one minute. Loosen rice with your hands, to separate the grains, and sprinkle them into pan. When rice is hot and separated, push it to the outside edges of pan. Put the meat and green onions into center of pan. Fry them for a moment and mix them thoroughly with rice, along with soy sauce and bead molasses. Form a well in the center of rice and drop in eggs and fry them until the consistency of creamy scrambled eggs. Then mix the eggs into the rice. Finally, stir in bean sprouts. Serve with soy sauce.

I boil the rice, throw in some frozen peas and sweetcorn near the end, then add egg, cook for a few minutes, some prawns/leftover chicken.
also add soy sauce and chinese 5 spice if you have it while rice is boiling.

I always fry onions together with garlic and ginger, Asian vegetables and/or mushrooms, cooked rice, spices, chili, soy sauce and fish sauce. Sometimes I add egg as well. Don't know if this is original Chinese, but it's nice.

White rice-Sautee the cooked rice with soy sauce, scrambled eggs, cut green onions, peas and carrot chunks, sesame oil. Some people like adding bean sprouts and cabbage too.... But ya.. basically it's super simple... just mix it all together and you can add and meat you want to it too... good luck!

long Grain honey. or Thai Jasmine Rice. yet much less consistency of water addition to rice cooking. chinese language continuously use Soy sauce of their dishes no rely what? i'm a huge fan of Soy sauce too.

Agree with Thaipo get the nasi goreng sachet from an Oriental shop, (about 40c in Dublin) and it really sets off the flavour. Add in some of the garlic stems (don't know the name, they look like spring onion stalks and are the stalks of garlic, they are FAB)

I was only thinking that same question this afternoon. One thing that helps is a hot wok. Try looking for Nasi Goreng recipes, beats chinese fried rice by a mile.
