Generally, with other dishes considered, 4-6 ounces of meat per person is usually ample. Some may consume more, some less.

You could divide those portions for each meat. If you think one meat may be more preferable than another, adjust the portions for each meat.
You may consider a little extra as a cushion.
Spare ribs may be an exception, considering the bones in the weight..
Men usually eat more meat than women.

A couple of things:
Buy a copy of a book called Food for Fifty. It is a basic reference text for people such as myself that feed a lot of people on a regular basis.
The correct way to convert any recipe is:
1] change all the ingredients to ounces or the decimal equivalent of
2 ]place the new yield- expressed in ounces-on top
3] place the old yield- again in ounces- under it
4] divide and arrive at a number . that number is your conversion factor . Multiply all the ingredients in your recipe by that number
Be very wary of portion sizes: the ones put out by the USDA are unrealistic.
