Well, I would keep in mind you may not eat for a while, so maybe something also a little more substantial, like poached or soft boiled eggs (I think either would go well with the brioche and peaches)... Another idea might be french toast with a bit of vanilla or cinnamon and cream in the beaten eggs with your peaches on top, maybe even a peach compote. Do you know how to make a "white-trash" souffle? It's very simply some egg whites with a bit of cream whipped to heck and some shredded cheese, I like jack (or gruyere if I have it) and microwave it in small bowls (ramikins if ya got em) until completely cooked. It almost passes for the real thing except for the golden brown top (and if ya have a kitchen torch, hey). Anyway, thought that might be a sort of fun thing, and still hint at elegance. I would definitely do some sort of fruit thing, like you have planned, or at least a fresh fruit plate or something, that's an easy way to flavor, color and beauty with not so much effort. I think your idea is really quite fine, with the exception of maybe making it a bit more filling with some protein, even just some bruschetta on the side, especially if it will be some time until lunch, don't want someone's memory of your very nice breakfast to be that they were starving in an hour, nor that they were too stuffed to enjoy the day. However, you probably know their appetites, certainly better than I, but it's something to keep in mind. Hope it goes great, and remember, no meal is terrible if the company's good. :-) -Rick

Stuffed french toast that can be prepared ahead of time and baked in the oven. Serve with a good syrup. I would also do fruit and sausage links. Coffee and tea's. This is light and refreshing. Also since you can prepare the french toast the night before you will have more time to get ready for your guests.

Kentucky Farmhouse Scramble
1 tablespoon butter
1 tablespoon canola or vegetable oil
8 ounces diced boneless country ham
1/2 cup diced roasted red peppers
12 large eggs, whisked until well blended
4 ounces grated Jarlsberg cheese (recommended: Kenny's Country)
Salt and pepper
Heat a nonstick 12-inch saute pan over medium heat. Add butter and oil and swirl around the pan until melted. Add the country ham and saute until it begins to brown, about 3 minutes. Turn heat to low. Stir in roasted red peppers and beaten eggs. After the eggs begin to set, stir slowly from edge to edge with a heat-resistant rubber spatula until large curds form. This will take 5 minutes or so. When eggs are still moist and slightly runny, fold in the grated cheese and season with salt and pepper.
Remove the pan from the heat and serve with fried green tomatoes and buttermilk biscuits with sorghum butter.
Sausage, Egg, and Cheese Scramble
INGREDIENTS:
* 6 links pork sausage
* 6 eggs
* 3/4 cup milk
* 3/4 cup shredded sharp Cheddar cheese
DIRECTIONS:
1. Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and chop into bite-size pieces; set aside.
2. While sausage is cooking, beat eggs and milk together. Pour eggs into griddle. Add cheese and cook until eggs are set. Stir in sausage and serve warm.

Bacon, Egg, grilled tomatoe, cheese and Vegemite in a toasted sandwich. Not Quick to make. Also Extreeemly messy. Very greasy. But hey, it's all about the flavour baby!!!
trust me! it will put the shizzel in their nizzel especially when you wanna fizzel the one you have a crush on's gizzel.

Agreat omellette or awesome french toast or swedish pancakes
make what ever your specialty is,
for some company I would make sausage gravy and bisquits
while for others I would buy all linds of fruits and melons,
depends on the season , etc, do what you do real well

I would serve some fresh pancakes, fresh eggs either scrambled and flavored or fried, cinnamon raisin toast and some fresh fruit cut up in a cute little watermelon bowl.

What about making eggs benedict with smoked salmon,dill hollandaise and english mufffins, and spiced chai coffee, infuse milk with cinnamon sticks, 2 cloves,nutmeg,rind of orange (can do day before),then steam and served with strong coffee, equal quantites,use honey as a sweetener,

why would you fry brioche? that would make it too heavy.
where i live, brioche is a light fluffy sweet bread we eat for breakfast with granita (like gelato, but icy and more granular...kind-of like sorbet) and cappuccino
or
fresh-veggie quiche with hollandaise-dill sauce on the side, with fresh-fruit compote on broiled whole wheat bread, and chai tea.
mmmm...now i'm hungry!
