The easiest i could suggest is
1>Games...which r easy to design on java...
2>Network traffic controller--i mean to decide which path a data packet should take when there is a congestion in the network...tht would be agreat project or if ur a student u can design a
3>P2P network...easier in Java
ALso can think about this one
4>WAP---i mean u can do smth like WAP enabled library lending..i.e u can check whatz there aand what not from ur mobile phone..also can borrow a book from the library..

no project is readily available in market. you need to create it. It can be used idea or new one. remember project is to show how much you are comfortable with the language. you can create any project for example. show the secure client sever communication is done in java.
create a database project like storing student db etc.
hardward control using java like lift control. traffic signals. this is dead easy if done in c or c++ but complicated in java, since java don't suppot pointers.
