If you are really good at studying and getting good grades, by all means take more courses. BUT it will look better on your transcript to have good grades for 2 courses than so/so grades on more courses.
I used to work for a university in the registrar's office.
Good luck.

Most career counselors recommend that students take a full course load (usually consists of 3 courses).
I'm sure there is pre-requisite courses and / or required liberal arts courses you could take.
I remember during under-graduate college taking day and night-time courses.

It depends to what your preference are. If what you wanted is to have as many degree as you like then take it. However, too many degree does not guarantee one's success.
If I were you I will just choose a degree that is near my heart and interest me. In this way, any circumstance that I will be into in the future will not be marred by any regret in my part. Remember, that in anything that we do it is always what we love to do, have, etc that count the most.

The less classes you take a semester means the longer it's going to take you to graduate. (Just ask me, I slacked off my first two years now I am on credit overload) Plus, if you have financial aid, you might lose it or a portion of it if you aren't taking a full load.
