You know legend has it that yema balls were first made during the spanish era . they found a way to use up the excess yolk while the egg whites are used for the foundation of churches. (looking at the size and number of churches here, there must be a lot of yema balls made) . *this is usually served wrapped in colored cellophane. this is also very sweet. i really dont know how long it takes to make and how many servings.






time to make 15 min 5 min prep
Change to: servings US Metric
yema
1 cup condensed milk
5 egg yolks
1/2 cup mashed potatoes
1 tablespoon vanilla
1 tablespoon butter
syrup
1 cup sugar
1/2 cup water
1/4 teaspoon cream of tartar




1. combine all the ingredients for the yema and cook until the mixture is thick.
2. set aside and cool.
3. roll into balls of about 1 inch in diameter.
4. Prepare the syrup: blend all the ingredients for the syrup.
5. Bring to a boil until syrup is caramel-colored.
6. insert a toothpick into the yema ball and dip into the syrup.
7. cool on greased baking pan.

1 can of sweetened condensed milk will do if you want to test it.
Pour all contents of can in a skillet. (don't use stainless steel pan as the milk will quickly goes brown.
Set skillet over medium heat, constantly stir milk until it goes light brown. You can test if the yema can be shaped like balls or pyramids as you say... by dropping a teaspoonful of it in a cup of water. It should stay in its form and the water still a bit clear.
To add twist for your yema:
-drop in some roasted unsalted peanuts/cashew or any other nuts
or kellogs corn flakes / rice krispies, while you are cooking it.

BTW, are you spanish or filipino?

only yema i have found has egg yolk in it.
