Beef Carpaccio.
No need to cook at all. Frozen beef sliced thinly, about 1mm. Just add olive oil and basil leaves and serve.

Carbonara
Ingredients:
1 lb. Spaghetti
3 eggs
1/2 cup Parmsean Cheese
1 clove garlic
about half a package of thick bacon (diced) don't use smoked or any other flavored bacon
lots of freshly ground black pepper
Cook the spaghetti according to the directions, save some of the cooking water.
Fry the bacon till crisp, remove it from the pan and pour out the grease leaving about 3 table spoons in the pan, saute the minced garlic for a couple of minutes then add the cooked spaghetti while it is still very hot, toss it so the pasta is coated with the garlic and bacon grease, lightly beat the eggs and add that to the pan and stir in some of the pasta water to make a creamy sauce, add the cheese, bacon, and black pepper and serve.
The key to this recipe is using very fresh eggs and adding the pasta immediately after it is cooked to the pan with the bacon grease and then the eggs, otherwise you end up with samonella and that just isn't a very good thing.

make spaghetti its really simple. A guy I know is italian and made the sauce all from scratch. its simple but it takes an entire day to prepare.... he used about 4 dozen fresh medium sized tomatoes an onion or 2 garlic cloves bellpepper musroom (not from can) and pepper and salt (any other seasonings you like) and well he blended all those together the amount of tomatoes depends on if you want to freeze some. You want to brown some ground meet but after you have prepared the sauce. You mix it all together and there you have your sauce of course he used store bought noodles but all in all it was good. keep adding until it is a taste you like. just remember you cant subtract anything after you have blended or mixed together. Hope this helps. It was really yummy :D oh yeah and if you like the mushroom peices in there you can cut some up for that too but yeah enjoy

Carbonara.
Pasta - cooked al dente in salty water, TASTE it all the time otherwise it overcooks, in the US the times are overstated. Buy italian pasta (barilla is OK).
1 egg per person, sprinkle of salt,
bacon
pecorino, black pepper to taste
while the pasta cook, break the eggs in a bowl, mix will with a fork, add 2-3 spoonfuls of grated pecorino. Pepper well.
Cut the bacon in little bits, and panfry until crispy. careful not to burn it!!!
drain the pasta well, and immediately pour in the raw eggs. The heat from the pasta will cook the eggs, and will form a creamy dressing with the cheese. Top with the crispy bacon, toss and serve with a last sprinkling of pepper!!! yummy.
serve with a plain green salad with italian dressing and crispy bread. a nice bottle of red wine is nice with it.

Fettucine alfredo! I got this light recipe from a person off of one of my questions and here I'll give you it. It's healthy, it's yummy, and if you'd like, you could grill some chicken to go along with it. I tweaked the recipe by adding a few sprigs of chopped parsley. Oh and for that recipe, make sure you let it sit awhile after you're done cooking it so it can thicken a bit (unless you want pasta soup).

boil some pasta with a few tablespoons of olive oil in the water... buy some boneless chicken breast, cook it up in a wok or frying pan with a little olive oil, a little chopped garlic and some rosemary, in another stir fry some vegetables (like diced yellow and green zucchini, diced carrots, diced sweet onions, a little garlic) in a few tablespoons of olive oil and maybe 1/3 cup of water... heat up some gourmet store-bought tomato sauce...
when everything is done, serve up the pasta on a plate with the sauce on top, then the vegetables, then the chicken on top.
serve with wine and crusty toasted bread and butter - or garlic cheese bread, or something.
if you want a really balanced meal make a fresh salad too and serve a small dish of salad with olive oil and balsamic vinaigrette dressing with the meal as well...

red spaghetti sauce w/meat
This is easy:
brown a pound of lean ground beef or ground turkey
drain fat off meat
add a can of Hunts spaghetti sauce (garlic herb)
add a can of diced tomatos
add a crushed clove of garlic
add a very very generous amount of Italian seasoning
add salt and pepper to taste
bring to a boil
turn down heat to medium low and let simmer for about 2 hours
serve over noodles
this is easy and good

Loads of garlic, chop v finely, fry in olive oil, add tinned tomatoes, loads of fresh basil, tomatoe paste, splash of red wine, and simmer on low heat for about 30 mins (can cook faster if you need to, it just tastes better cooked slowly) - cook some nice penne or any other pasta you like - use fresh shaved parazan on top, with about 5 fresh basil leaves - he'll love it

Add in's
Mushrooms
Pepperoni
Green bell peppers
Basically anything you would add to a pizza..
