If you are getting a headahe your body is telling you that either you are not eating enough or that you aren't eating the right foods - the food that it needs.
You should be eating lean protein, low fat products or fat free versions, grains, veggies, beans, fruits, etc. Also - your blood sugar drops around 3pm and it is good to have a energy snack around this time like a banana, cup of fruit, etc.
To keep your metabolism and energy up - you should be eating 6 small meals a day - every four hours. Try to have cereal, egg whites, turkey, tuna fish, salads, grilled chicken, lean meat, fish, nuts etc - If you eat a combo of these foods each day you won't have to eat half of the portion and you would lose weight as well. If you add some activity, that will also help you burn any excess calories but the most important thing when dieting is to listen to your body - it is telling you that it isn't enough so instead of eating meals that you have to eat half of, try eating 6 small meals a day with high energy foods and high energy snacks - your body should adjust to this well - eating the small meals would also reduce the risk of headaches etc associated with changing your diet.

Not knowing what kind of diet you are trying, it sounds like you either aren't getting enough water or you are missing something nutritionally critical in your diet.
I would recommend increasing your water intake or taking a multivitamin to try to balance out your body's nutritional requirements. It probably also wouldn't be a bad idea to call your doctor and ask if he/she has any recommendations based upon the type of diet you are trying.
Some diets are really unhealthy and you can do some permanent damage to yourself so be careful.

Stress of eating less. Diet is not a quick fix, reduce you intake minimal and increase your exercise a lot. Easy formula with little stress. Remember, there is no short cuts in life.

reduced portions require doubled water and addition of electrolytes
Also
if you eat very fatty or sugary foods, reducing portions won't help all that much. You have to change the KINDS of foods you eat AND reduce portions.
