You can fit a 31x10.5, but it will rub the fenders when the suspension flexes off-road. I would recommend a 30x9.5 to make sure you have clearance. You could put in a 2" body lift and clear the 31's no problem. Body lifts are cheap and easy to install.

I had 33x12.50's on my 97SE and had very minimal trouble with them rubbing while off-road, but I recommend going no larger that a 31x10.50 for just that reason.
