Cheese on toast with chopped up mushrooms - go easy on the cheese, drizzle with balsamic vinigar - yummo,
Chicken and veggie stirfry - no rice - using whatever Asian sauces are left over in the fridge
Eggs are great, crack one in a bowl, add chopped mushrooms, capsicum (you might call them peppers in the us), bit of cheese, stir, pour inot fry pan on low heat - let it cook on the stove top - frittatta in a minute -

I'm in a similar boat to you cept I have to cook for 2, dnt have the $$ for frozen dinners.... however I do occasionally serch new cheap recipes.
for eg.
WEENIE SOUP.
Tomato soup with added mini hot dog frankfurts.....iv also added mixed vegs to add more..
The other day I made from scratch this stew.
Tomato soup, steak cooked and diced with a whole heap of veg and it turned out really well..add salt and pepper to taste.
Spag bog is pretty cheap..
Frozen crumbed fish and salad...
Sausage and mashed potato pie with salad.

You will find no lazier cook than me.
In Wales we make Cawl. It is real nice.
Get some carrots, potatoes, turnip, swede, leeks, onions and chop em all up into bits.
Put em in a big pot with water, salt, pepper and gravy granules and simmer for an hour or two.
Eat it with hot bread and cold butter.
It is amazing.
You have to get the ammount of salt, pepper and gravy correct though. (to taste)

That's easy. Eat fresh fruits and veggies. Cook the veggies or eat them raw. Buy a stovetop grill or grill pan and grill chicken, turkey burgers, or steaks. When meat goes on sale, buy a few family packs and divide them into mealsize packages and freeze.
