The Chinese Shar-Pei use to be fighting dogs in china. When a dog would bite on to them, they would still be able to move and turn to bite the other dog since they had such loose skin.

They were originally bred for food. The wrinkles were a sign of tenderness. The chow-chow was also bred for food.Any dog with a black tongue was considered edible,shar-peis & chows have black tongues. You might think this is funny but in some cultures the eating of cows & pigs are considered repulsive. Why do you think they call food "chow"in the first place.

Here is a quote from Dog Owner's Guide website.
"The breed developed in the southern provinces of China as a working companion of farmers and peasants who needed a cattle herder, guardian, and hunting helpmate. His loose skin, nettlesome coat, and small ears protected him in battles, characteristics that unfortunately gained him favor as a fighting dog."
I see no mention as a food source in my Google searches.

But you ask why the wrinkles. This is an ancient breed and has had wrinkles for hundreds on years, maybe before first records of this dog.
