Cover it up and keep basting it you cook for 2 to 2 1/2 hours at 325.

We barbequed a brisket a few weeks ago. It was fantastic!

You have to use the in-direct grill method for about 6 hours. Use smoke chips and add new, hot charcoal once an hour to both sides.
