Well that depends on the brand. Cheapo brands are usually just the left over bits that all the other meat don't want, like some of the organs and the hindquarters, etc. from pigs and cows, mainly.
Many Kosher 'franks', however, are made with the better part of cows. I still would rather have tofu, but that's just me.

All though it is very unattractive its made from mostly scraps and semisolid products made from one or more kinds of raw skeletal muscle from livestock (like beef or pork), and may contain poultry meat. Water and ice may be used to facilitate chopping or mixing or to dissolve curing ingredients. The finished products may not contain more than 30% fat or no more than 10% water, or a combination of 40% fat and added water. Up to 3.5% non-meat binders and extenders (such as nonfat dry milk, cereal, or dried whole milk). In conclusion, eat with caution or maybe try organic instead.

It also depends on the state that they are manufactured and sold in. Different states have different regulations.
When in doubt, get a Kosher dog - all beef, no nasty parts.

Yeah... they are made of the leftover parts of the pig. When in doubt read the ingredients label it will clearly list: pig intestines, tongue, etc., etc., etc.
