Hot Potato Soup... It's really delicious. My mother and I came up with this recipe. The quantities are not necessarily exact, just use your best judgement.
You will need:
1/4 cup butter
1/4 cup flour
3 small (or 2 large) potatoes, peeled and chopped small
a 12- ounce can of evaporated milk (optional, but I think it helps the texture)
1-2 Knorr chicken bouillon cubes (to taste)
a pinch of salt
About 3 cups of milk, depending on how thick you want it
Dried parsley and basil to taste
1/4 large onion, chopped finely and sauteed in butter.
In a pan, melt the butter. Take it off the heat. Stir in the flour with a wooden spoon. Return to heat and stir and cook until it's bubbly. Let it bubble (without burning it) for at least five minutes. Then stir in the evaporate milk, a little bit at a time. The mixture should get very thick around this time. Add the regular milk gradually, stirring it frequently. Add the chicken bouillon cubes and smush them with the spoon until they're completely dissolved (they give the soup a great flavor). Add the herbs and salt. Add potatoes. Turn up the heat to slightly above medium and bring to a simmer. After simmering for at least ten minutes, add the sauteed onions. Keep stirring, because the mixture sticks to the pot easily. Thin the soup to your preference with milk. Test the potatoes by spearing them with a fork... once the potatoes are done and the soup has thickened, the soup is done.
Whew.. that was a lot of typing, but I promise it's delicious soup.

Beef Stroganoff Soup
1/4 C. butter
1 lb. tenderloin tips cubed
2 cloves garlic minced
12 oz. mushrooms sliced
1 large onion diced
1 C. shredded carrots
1 pint of water
1 T. beef base
Roux made of 1/2 C. butter and 1/2 C. flour
salt and pepper
1 pint of whipping cream
1/2 C. sour cream
1/4 C. chopped chives
In a 5 qt. pot, melt the butter and add tips, garlic. Cook until meat is browned, about 5 minutes.
Add mushrooms and onions. Saute until onion is translucent.
Add carrots, water, beef base, salt and pepper. Bring to a boil and simmer for 15 minutes.
Make roux by melting butter and add flour to it. Stir until smooth and cook 2 minutes. Gradually add to soup, stirring all the time. Add whipping cream and taste to adjust seasonings. Remove from heat and add sour cream.
Ladle soup into bowls and top with chives.
Makes 6 - 8 servings.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Diced Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours or high for 2-3 hours

MINESTRONE
(serves 4)
2 TB. olive oil
1-2 garlic cloves, minced
1 medium onion, chopped
1 carrot, thinly sliced
2 stalks celery, sliced
1 cup shredded cabbage
1 (15 oz.) can cannellini beans, slightly drained
1 (14 oz.) can diced tomatoes
2 (14 oz.) cans beef broth
1/4 cup chopped parsley
1 tsp. dried basil
1 tsp. dried oregano
1 cup elbow macaroni
Pinch of red pepper flakes
Salt and pepper to taste
Heat oil in a stockpot over medium heat.
Add garlic, onion, carrot, celery, and cabbage. Sauté 8-10 minutes.
Add beans, tomatoes, broth, parsley, basil, and oregano.
Bring to a boil, reduce heat, cover, and cook 1 hour.
Transfer about 1-1/2 cups of the soup to a food mill or blender and puree.
Return the puree to the soup and add pasta and red pepper. Salt and pepper to taste.
Cook an additional 15 minutes. Add water if the soup gets too thick. Serve.

Tomato soup.
1 cup of Campbell's tomato soup.
add 1cup of milk,
add a small amount of ground cayenne pepper, or paprika,
add about 1cup of kraft shredded cheddar cheese, or 3 american singles to the soup when it gets hot. Pour immediately into a large soup cup as soon as the cheese melts. Its really good, and it warms you up quickly.
velveeta soup
Melt about a cup of velveeta cheese with a cup of milk.
add some cayenne or paprika, to taste. The secret to this recipe is to add more milk which will make it more of a soup, instead of a dip. I know it sounds weird, but it is really, really delicious!!!

I love Chicken Chili on a cold day absoutley delicous and easy:
2 chicken breasts (cooked and shredded)
1 box chicken stock
1 jar salsa (your choice in the heat factor)
1 large jar Northern Beans
1 Bag cheese (again your choice, I use the 3 blend)
That is it. Put it all together. Cook for an hour! Can even be used in a crock pot and cook all day till you get home and then just enjoy with a little sour cream and more cheese on top. YUMMY!!! Try it!

pistou Veg soup: Indrg:1/2 cup olive oil,1onion choped, 1 small patato diced, 2 carrots sliced ,185gms French beanscut short ,30gms broken spaghetti or pasta, salt and pepper.for pistou paste 3 cloves garlic 4tablespn chop basil leaves ,60gms grated parmesan cheese, 2tomotoes skinned n chop. Heat 3 teaspn oil in pan,add onionn cook till light brown ,put 5cups water n boil then add all vegs n pasta or spagti boil n simmer cook until tender . meanwhile pound garlic basil with salt n add cheese n mix to form a thick paste n then add 1/3of tomptoesn mix and keep slowly adding tomatoes n olive oil to make thic paste. serve the hot soup with pistou paste seprate for the person to add to his or her desire

Chunky beef stroganoff. Boil up some egg noodles, butter them and mix them into hot chunky beef soup with sour cream, diced onions, and a bit of paprika . Serve with a nice glass of milk and a slice of thick, warm, buttered bread to dip in it. Oh man, it is really good! It'll make your dog drool.
