They're made from chicken... the wings of chickens in fact. Imagine that!
If your buffalo wings are small, then the place you got them from happens to use the wings of small chickens. You can get bigger chicken wings too. If you were adventurous enough, you could even use turkey wings, but you'd only need one or two.

The reason why they are called buffalo wing is because they were popularized in Buffalo New York, in the mid-70s. The smaller wings are usually from the broiler, fryer or roasters.

some times they use "capons " or "Cornish hens" I used to find Cornish hen parts ( the wings and thighs) in 5 lb boxes and used them to make Buffalo wings for snacks
