What do they call them fried oyster thingys? And what else do they serve with them at those types of dinners....they are usually held at VFW halls...Volunteer Fire Houses and some churches?

They have roast beef and a variety of other foods. Open bar and dancing!!!!!!!!! A good time for ALL!!!!

In my part of the country, hog or goat roasts are more popular than bull [ox] roasts. This seems illogical, because this is cattle country, and goats are hard to find.

Anyhow, cooking a whole ox, is much more work than cooking a pig or goat. And the beef is a more expensive party, too, because you have to have so many more guests to eat all that meat.

Those "Oyster Thingys" are the testicles of former bulls, that have been castrated, to make them grow to butchering size more profitably, and also because, in general, steers are less agressive than bulls, which means fewer cowboys injured.

Testicles are prepared, and fried, and are really quite tasty, even more tasty if you don't know what you are eating. Here in the High Plains, these are called "Mountain Oysters".
