I am making homemade muffins for tomorrow, but want to bring some into NYC with me Friday afternoon for a friend I am visiting. Should I freeze the muffins?? Refrigerate? Or just make fresh ones Thursday night? I am making: Molasses-Bran, Lemon-Blueberry, and Chocolate with White chocolate chips.

you should wrap then in seran wrap. As long as they are sealed and refrigerated, they should be good. Keep them sealed where no oxygen can enter. I would wrap them up individually in plastic wrap and put in fridge. The best thing is to make fresh ones if your time allows. Blueberry or even with a mix of apple and grape is a crazy combo that makes a good fruity treat for fluffy muffin. Baking powder, vanilla extract, cloves, and margarine management makes a killer cake. Good luck, and i'll see you later, im starving ;p

Freeze them until Friday morning in airtight container. Thaw at room temperature and transfer to a clean, dry container to carry them in.

put pieces of white bread over the tops of them once you put them in a container. The muffins "soak up" the moisture from the bread, keeping your muffins soft, but the bread should be changed every other day until you eat your muffins.

sign me up for lemon-blueberry. i'm on 93rd/1st.

Freeze the muffins? Then microwave or reheat in oven (microwave makes baked goods mushy which is just right for muffins, but they will stiffen after being left out).

Making them fresh at the last possible moment would be your best bet. If you freeze or refrigerate them, they could come out soggy. They sound delicious.

Prepare the batter the night before, then make enough time in the morning to bake them. If you can't to this, don't leave them sitting out until they bercome hard as a brick.

the superb way is to maintain them out of the refrigerator, hide them with a moist tea towel and keep in a funky larder or in a funky nook. They style nicer than being interior the refrigerator.

I would wrap them, and put them in the freezer, and just take them with you, and let them thaw, or you could just bake them thursday night, either way I think would work
