Sweet and Sour Meatballs

INGREDIENTS:
* 1 1/2 pounds ground chuck
* 3 to 4 tablespoons chopped water chestnuts
* 3/4 cup quick oatmeal
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 1/2 teaspoon salt
* 1 egg, beaten
* 1/2 cup milk
* 1/2 teaspoon soy sauce
* .
* Sauce:
* 1 cup brown sugar
* 1/2 cup beef bouillon
* 1/2 cup vinegar
* 2 tablespoons cornstarch
* 2 teaspoons soy sauce
* 1 can (8 ounces) pineapple tidbits, drained
* 1/2 cup chopped green pepper
PREPARATION:
Combine meatball ingredients; shape into 1-inch balls and brown on all sides in oil. Drain and set aside. Begin sauce: Combine sugar, beef bouillon, vinegar, cornstarch, and 2 teaspoons soy sauce in a large deep skillet or Dutch oven; bring to a boil. Boil sauce mixture until thickened; stir in pineapple, green pepper, and meatballs. Simmer for 30 minutes.
Makes about 4 dozen meatballs.

Sweet and Sour Meatballs
This meatball recipe is perfect for a party or family gathering!
1 lb. lean ground beef
1 lb. mild pork sausage
2 c. fine bread crumbs
2 1/4 c. onion, diced
2 large eggs
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. oil 3 Tbsp, cornstarch
1/2 c. garlic vinegar
1/2 c. pineapple juice
3/4 c. brown sugar
1 Tbsp. Worcestershire sauce
1 large green pepper, diced
1 (20 oz) can pineapple chunks
I (8 oz) can tomato sauce
Combine ground beef, sausage, bread crumbs, onion, eggs, salt and pepper. Mix well and shape into 1 inch meatballs. Brown in hot oil. Drain and place meatballs in a deep 13 x 9 inch baking dish.
Combine cornstarch, vinegar, drained pineapple juice and sugar. Cook the sweet and sour mixture over medium heat or in microwave until clear and thickened.
Combine with Worcestershire sauce, green pepper, pineapple chunks and tomato sauce. Pour over meatballs and bake in 325° oven for 30 to 35 minutes.
Makes about 6 dozen, depending on size of meatballs.
A great tasting appetizer!
* You can make the meatballs ahead of time and freeze them. Then thaw, bake and make the sweet and sour sauce

3/4 lb. (3/4 of 16-oz. pkg.) frozen prepared meatballs
1 medium each: red and yellow pepper, cut into chunks
1/4 cup water
1/4 cup apricot jam
1/4 cup KRAFT CATALINA Dressing
2 Tbsp. soy sauce
3/4 tsp. each: ground ginger and garlic powder
3 cups hot cooked MINUTE White Rice
COMBINE all ingredients except rice in large skillet; cover. Cook on medium heat 10 min., stirring occasionally.
INCREASE heat to medium-high; uncover. Cook 8 to 10 min., or until sauce is thickened and meatballs are heated through, stirring occasionally.
SERVE over the hot cooked rice.

Great Substitute
Substitute 3 cups frozen vegetables for the peppers. Just add during last 6 min. of the final cooking time.
Round Out The Meal
Serve with your favorite steamed vegetable.

Make regular meatballs, but do a combination of pineapple juice, white vinegar, and brown sugar to taste for the sweet/sour component. You can add a touch of red food coloring to zest up the appearance a bit....

i know this sounds funky but try it once and you'll be sold like me
either make your own meatballs (and brown them first) or buy frozen already made, put in roasting pan, cover with sauerkraut and cranberry jelly, cover with foil and bake at 325 for 45 min

use bbq sauce and slowly stir in grape jelly to taste. then when heated ( disolved jelly) put in your tiny meatballs , cover and cook at a simmer till done. i use one large jar of welches grape jelly and two bottles of store brand bbq sauce. sorry cant be more specific of amounts - dont have any on hand . now i'm hungry and have to wait till tomorrow for a trip to town :(
