I've regularly driven on 287 S from as far north as Whippany (Morris County) or further, down to Exit 1 in Perth Amboy, and I've never had any problems at all. I'm not really familiar with the exits you've mentioned in particular, but I'm inclined to say don't worry. I can recount numerous horror stories about the Parkway, the Turnpike, and Route 22, but none about 287.

The road is not elevated so your phobia about height is unwarranted. The only section which is not on ground level is for brief overpasses where roads are under the highway. Sections of the road can become congested at rush hour, especially exit 41 (route 80) exit 35 southbound (Morristown) due to lane merging and exit 17 (Somerville) due to complicated traffic pattern.
