I have a recipe for it but it calls for jalapeno's and cilantro I dont remember it to have those things, I remember it sweet not spicy, dose any one know?

I am from a German family, and this is the family recipe.

German Potato Salad

12 sliced, cooked potatoes or 8 cans sliced potatoes
1c. water, 1/2 c. vinegar, 2 T. flour
1 tsp. salt, 1/4 tsp. pepper, 2/3 c. sugar
2T. bacon grease, 1 sm onion chopped
6 slices fried bacon, broken into pieces

Fry bacon and chop onion before starting.
Combine 2nd line in lg fry pan, cook until thick, stirring frequently.
Add salt,pepper, sugar, and bacon grease.
Stir til well blended. add bacon and onions.
Pour over potatoes and let stand at least 30 min. or overnight to absorb the flavor. Can be eaten hot or cold.

if it calls for jalapenos and cilantro it's certainly not german... *lol* i'm german, so here goes:

1 pound small, firm potatoes
2 medium sized onions
4 gherkins
chicken stock
pickle juice
salt
pepper
mayonnaise

boil the potatoes in their skins, peel them and cover them with chicken stock. chill the potatoes in the stock till cold. dice the onions, slice the gherkins. discard the stock, slice the potatoes. put everything into a salad bowl and blend with a dash of pickle juice from the gherkin jar, salt, freshly ground black pepper and mayonnaise. the chicken stock is a matter of personal taste. my grandma used it, my mom doesn't, both made/ make nice spud salad. at home we'd eat that with frankfurters or fish. if you rermember (or prefer) it sweet, add a pinch of sugar with all the other seasonings.

the way i make mine is boil potatoes in skins, cool ,slice about 1/4 " thick slices then slice onions put 1 layer potatoes & 1 layer onion,keep on layering till all used , then mix 3/4 c. vinegar & 1/4 c. oil pour over potatoes & onions . let them soak over nite . they are good up to a week in refrierator. you may sprinkle bacon crumbled up on top if you care too. i hope you enjoy ,i never have any left where ever i take it . should it be too much vinegar just add a little more oil.

Potato Salad Recipe: German-Style Potato Salad With Bacon And Balsamic Vinegar

2 pounds red OR new potatoes, boiled, peeled, if desired and cut into 1/4-inch-thick slices
1/4 cup balsamic OR cider vinegar
1 teaspoon kosher salt OR 1/2 teaspoon table salt
1/2 teaspoon ground black pepper
4 to 5 thick slices (about 4 ounces) slab bacon, cut crosswise into 1/4-inch strips
1 medium onion, cut into medium dice
2 tablespoons vegetable oil
1/2 cup beef broth
1/4 cup minced fresh parsley

Layer warm potato slices in a medium bowl. Sprinkle with 2 tablespoons vinegar, seasoning with salt and pepper as you go. Fry bacon in a medium skillet over medium heat until bacon is brown and crisp and fat is rendered, 7 to 10 minutes. Transfer with a slotted spoon to potatoes. Add onion to bacon drippings. Saute until softened, 4 to 5 minutes. Add up to 2 tablespoons vegetable oil to yield 2 tablespoons unabsorbed fat. (If bacon is fairly lean, onion will absorb most of drippings.) Add beef broth and bring to a boil; add remaining 2 tablespoons vinegar. Pour broth-onion mixture over potatoes. Add parsley; toss gently to coat. Adjust seasonings; serve warm or at room temperature.

Makes 6 servings.

my mother made the best salad she is gone now and i could never do it the way she did. Cooked potatoes let them cool.
Has to be yukon gold potatoes. In a bowl she added a little oil and onions , vinegar and mayo. she sometimes put in shrimp or pickled herring. Salt and pepper of course

Fry bacon til crispy. Remove onto paper towels.

Cook diced onion in the bacon grease.

Add crumbled bacon, cooked onion & a tad of the grease to boiled, cut potatoes.

Add mayo, salt & pepper to suit your taste & preferred consistency. Sprinkle w/ a tad of white sugar.

Serve warm.

Hot German Potato Salad
6 medium potatoes, peeled, cooked and sliced
14 slices OSCAR MAYER Center Cut Bacon, cut into 1-inch pieces
1 medium onion, chopped
2 stalks celery, thinly sliced
1 Tbsp. flour
1/2 cup water
1/2 cup cider or white vinegar
1/3 cup sugar
1/4 tsp. each: salt and pepper
PLACE potatoes in large bowl; set aside.
COOK and stir bacon in skillet on medium heat to desired crispness. Remove bacon from skillet; drain, reserving 2 Tbsp. drippings in skillet. Set bacon aside.
ADD onion and celery to skillet; cook and stir until celery is crisp-tender. Blend in flour. Stir in water, vinegar, sugar, salt, pepper and bacon. Bring to boil. Cook on medium heat 5 minutes or until thickened, stirring occasionally. Pour over potatoes; mix lightly. Serve warm.
