There's some nice synthetics that look like grass matting, if you don't want to paint.
If you do paint, be sure to use a latex semi-gloss, as it's more water-resistant than flat paint. Be sure to use a primer, especially since you've removed layers of paint and the walls may have an uneven texture.

Before you paint, install a high volume extractor and a window in your bathroom which will reduce the build up of humidity. Tile is always the best solution.

Make sure you put the primer first before painting. Primer like, "Kilts"(I think I spelled it right...)prevents stuff like mold & mildew. I used waterbased semi-gloss paint for my bathroom. You must dry it completely before you take shower, and make sure you air it out each time you use bath/shower afterwards.

there are great paints on the market for problem areas such as bathrooms. you can use a melamine paint which is made for bathrooms. But if you look around Home Depot carries it.. Its a paint made just for moisture areas....

Could you use outdoor house paint? That should stand up to moisture pretty well. I'm sure there is also bathroom paint.

Be sure you use a semi-gloss paint in rooms where moisture is an issue.
