Uh-oh..trying to impress Mom can be difficult. This is going to be tricky since she's vegetarian--and she might have certain rules about not eating any food that has been cooked with butter, or cooked near meat...I wouldnt cook for her if I was you. Find a good nearby vegetarian place and ORDER OUT!

You can make this one spicy or not. It's very versatile. You can pretty much use whatever veggies you want. You could also use some firm soy bean curd. (Tofu)
1 large onion cut into wedges
1 large red bell pepper cut into wedges
1or 2 zuchinni, sliced thick
1 or 2 yellow squash, sliced thick
Chopped garlic
1 large or 2 small portobello mushrooms, sliced
1 can Italian style stewed tomatoes
1 pkg. penne pasta
Start water to boil for pasta.
In a large skillet heat enough olive oil to coat bottom of pan. Throw in the onion first, then put in the bell pepper, then the squash, and the garlic.
Keep stirring this around and let it get a little browned on the edges. Put in the portabello mushrooms. Stir them around. You can add more olive oil if necessary. Stir in the stewed tomatoes, salt and pepper, and whatever you want to make it more spicy. Put the lid on the skillet. Turn heat to low. Cook the pasta. Drain and add to skillet with veggies. I serve this with lots of garlic bread to soak up the good juices.

I make this once a week: it's terrific!
Spiced Indian Kidney Beans
(Preparation 30 minutes)
14-ounce can red kidney beans
¼ cup vegetable or olive oil
¼ teaspoon cardamom powder
1 medium onion, minced
2 teaspoons crushed garlic
1 teaspoon grated fresh ginger
1 teaspoon minced red chili or ½ teaspoon crushed red pepper flakes
1 teaspoon ground coriander
½ teaspoon cumin
¼ teaspoon turmeric
8 ounces of canned crushed tomatoes
1 large green chili, minced
2 tablespoons minced fresh cilantro
¼ teaspoon salt
½ cup water
¼ teaspoon garam masala
Place the beans in a mesh colander and rinse under cool water. Set aside to drain.
Heat the oil over a medium flame in a medium saucepan. Add the cardamom and onion and cook until soft and golden, about 5 minutes. Add the garlic, ginger and chili and cook 3 minutes. Reduce heat to low and add the coriander, cumin and turmeric.
Cook for 2 minutes.
Add the tomatoes and cook another 2 minutes. Add the green chili, 1 tablespoon of cilantro leaves, salt and water.
Increase heat to medium and bring to a boil. Reduce heat to low and simmer uncovered for 10 minutes. Add the kidney beans and a pinch of the garam masala. Simmer another 8 minutes.
Transfer to a serving dish and sprinkle with remaining cilantro and garam masala.
Makes 4 servings.

Here is what you make her. She will really be impressed! I promise.
Taboule Sandwich
Slice whole wheat bread from bakery real thick (3/4 inch)
Butter both slices and place on cookie sheet butter side up.
Pile Taboule on one side (at least 1 cup).
Pile fresh sliced mushrooms (one cup) on other side.
Heat under broiler for several minutes until hot.(watch it!)
Pull out and top mushroom side with 2 or 3 slices provolone cheese.
Heat under broiler until cheese melts. (watch it!)
Pull out and put sandwich together with spatula in one move. Easiest if put mushroom side on top.
Carefully slice in half, serve with sun chips/cucumber slices, ice tea. You will need a fork. This is VERY filling.
Use a box mix such as "Near East" brand Taboule. Do not add crazy other stuff like olives. Just make the basic recipe, please.

cook her a nice dhal. this one is tried and tested:
1/4 pound red lentils
1/4 pound green lentils
1 green pepper
1 red chilli
1 banana
1/2 onion
chopped flat leaf parsley
tumeric
coriander
cumin
tabasco
plain yoghurt
oil for frying
water
cut pepper coarsely and chop chilli, banana and onion. heat oil in a roasting pan. stir fry pepper, chilli, banana and onion till onion is glazed, add seasonings in the process. add lentils, stir fry everything for a minute or two and add enough water to cover everything plus about 3/4 inch more. bring water to a boil, then reduce heat by half, cover the pan and cook for about twenty minutes. blend with a pot of plain yoghurt and serve with rice and naan bread.

1 cup black-eyed peas 1 tsp. cayenne pepper
2 onions, peeled and chopped 1/2 tsp. ground cumin
2 potatoes, peeled and diced into 1-inch cubes 1/2 tsp. ground coriander
1 eggplant, cut into 1-inch chunks 1 cup coconut milk or 1/4 cup half-and half
1 tsp. curry powder 1/4 tsp. salt or to taste
1. Soak the black-eyed peas in water for 1 hour. Drain. In a 3-quart saucepan, simmer the peas in 5 cups of fresh water to cover. After 25 minutes, add the onions and potatoes. Add the eggplant 5 minutes later. Continue to simmer for 5 minutes, or until all the vegetables are tender.
2. Add the curry powder, cayenne pepper, cumin, coriander, cocunut milk, and salt. Simmer for 10 minutes until the flavors are blended.
3. Serve hot with rice, chapatis, or toast.
Buttermilk tortilla
This recipe gives a new twist to the good old deep fried puffed tortilla recipe. This tortilla is more layered and flaky and has the buttermilk taste to it. It is usually had with chana masala (garbanzo beans in gravy), potato onion curry or any other gravy dish (recipes can be found in the gravy section).
Ingredients:
2 cups all purpose flour
¼ cup warm 2% or whole plain milk
½ cup buttermilk
2 to 3 tsp plain unsalted butter
2 tsp salt
A pinch of baking soda
24 fl. Oz oil
Method:
Mix all the ingredients to tough dough like you would mix for bread.
Keep it aside, covered for 3 to 4 hrs.
Divide the dough into small balls.
Roll each piece or ball into a 3-inch circle and immediately deep-fry each circle in oil on both sides till it turns golden brown and puffs up. Sometimes it will not puff up fully or at all. It is still okay and will be as tasty.
Remove and lay it on a plate lined with paper towel to help absorb the extra oil.
Repeat till all the balls are rolled and deep-fried.
Stays for a day over the counter.
This is also called batura.
A rich, tasty, simple dessert which has very few ingredients on the list. Stays over the counter in a covered container for a week or more.
Ingredients to prepare 20 squares:
*means available in indian grocery stores
4 cups milk (whole milk prefered)
1/2 cup blanched almonds
1&1/2 cup sugar
*1/4 cup clarified butter/ghee
1 teaspoon cardamom powder
Method:
Soak the almonds in hot water for 10min and blanche.
Grind the almonds to a smooth paste adding very little water. Add just enough water to help grind the almonds. It helps if the paste is as thick as possible.
Grease a plate with the clarified butter and keep aside.
Bring the milk to a boil in a heavy bottom saucepan. Keep stirring the milk from this point onwards till it attains a thick mud like consistency.
Lower the heat and add the almond paste, sugar and continue stirring till the sugar dissolves, becomes watery and again starts to thicken.
Add the remaining clarified butter and keep stirring till the paste becomes thick and starts to leave the sides of the saucepan while stirring.
Add the cardamom powder, give it a stir and remove from heat and pour it in the greased plate and spread evenly.
After it cools halfway cut into pieces of desired shape. Seperate the pieces after it has cooled down completely and store in a airtight container.
Tips:
If the paste is removed from heat a little earlier it will be like pudding.
Use a heavy bottom saucepan or the paste will stick to the pan and might get burnt.
After soaking the almonds in hot water for 10 min if the almonds are given a sqeeze the skin will peel off.

I would try something like cheese enchiladas..there is no meat and you can vary the temp of the food by the chilies that you add to the sauce and it cann be very simple...corn torillias, monterrey jack cheese or cheddar or both, and red or green enchilada sauce and plus the extra chilies you add for heat..you can also add sour cream. for recipies like this i would try www.food.com
