hi all

can anyone of you tell me whats the benefit of using parboiled or converted rice as opposed to normal white rice?

is it less starchy...etc?

also, when using rice cooker to cook parboiled rice, how much water is needed for one cup rice?

Converted and Parboiled rice are a little bit different from each other!

Parboiled Rice : - Slightly yellowish or beige in color, this type of rice cooks more slowly than white rice, yet many prefer its fluffy, separated texture once cooked. It is produced by soaking, boiling or pressure steaming, then drying before it is milled, gelatinizing the starch in the grain and infusing some of the bran's nutrients into the kernel
Where as a normal Long grain rice is just husked and polished rice!
Converted Rice : This is parboiled rice that has been further pre-cooked so that it does not take as long to prepare in restaurants or at home

Parboiled rice takes lesser time to cook and due to steaming is good for health too! They are very fluffy in texture and do not stick together. Parboiled rice is better for health than White rice 'cos one it has more nutrients than normal white rice Secondly they are not so starchy.
I cook my rice in a pressure cooker so anyway it takes lesser water and lesser time to cook rice ( Only 12 mins for 2 cups of rice )! In a Rice Cooker I think you will need to add 2 cups of water for every 1 cup rice.! Also High altitude cooking requires more water and more time.

It just has a shorter cooking period. regular old rice is the most nutritious.
