A "persone" can't interact with the environment. Now a "person", anything and everything you do physically interacts with the environment in some way, big or small. Such as taking a breath lowers the air pressure around you and exchanges gases with the air. Or, taking a step pushes molecules of dirt further down into the ground and also displaces the air around your foot.

A person does much directly and indirectly that interact with the environment. He (or she) consumes food and drink, breaths oxygen in and carbon dioxide out and expels urine and faeces. He wears clothes which may be of animal, vegetable or petrochemical origin. He probably lives in a house. He also probably use means of transportation involving vehicles using fuel or electricity the production of which impacts on land, water and the atmosphere. He may well heat his house in winter and air condition it in summer. He buys consumer products which may involve a vast number of activities including extraction of minerals by mining and many manufacturing processes. He produces rubbish which has to be disposed of. In short the ways in which a person lives ultimately interact with the environment in a myriad of ways.
