EVOO is the first skimming off the olive press...VOO is the second skimming. The first skimming leads to a better quality olive oil.

The difference is which pressing did the olive go through, The very first is called extra virgin and the second is virgin olive oil. hope this helped.

I'm no expert, but to me there's alot of difference in the flavor. Extra virgin olive oil has a much more pronounced taste than the lighter versions. It is darker in color and seems "heavier".
I prefer "evoo" with Italian recipes like spaghetti or lasagna. But when I'm making something more traditional - like fried chicken - and I DON'T want that extra layer of flavor, I'll go with the lighter olive oil or canola oil instead.

Olive oil is made by "pressing" olives. The first pressing produces the "Extra virgin" oil while subsequent pressings don't.

They throw all the olives into a press, which squeezes the oil out. The very first squeezin's are "extra virgin", the next are "virgin", the rest are sluts!
