I am a vet tech at a cat shleter and head the foster program, and I have seen many litters of one. It happens in dogs too. Sometimes the mothers age or body condition can be the cause.
Spay the mom and you won't have to worry about it again.

This usually happens when the mother is very old. My Persian which is 1 1/2 yr old was a single kitten litter, her mother was 14 years old!!!!!!!
