The Vatican City is 100% Catholic, and yes, it is considered it's own country. Of the ones you've mentioned, Italy is the most catholic. Ireland shouldn't really be on your list. While there are a lot of catholics in Ireland, there are also a lot of Protestants, as well.

Mexico. The European Catholics practice a duplicitous brand of Catholicism. They don't believe in divorce but the men can have mistresses. The Philippines were forced into Catholicism and really are buddhists at heart.

I wouldn't pick a EU member country because of the waning influence of religion as secularism gains momentum.
Probably the poorer countries like Mexico or the Philippines.
