Broccoli is always good, especially if you add some cheddar cheese to the dish and not just the powdered stuff.
I like to add broccoli and chicken, extra cheese, some milk, salt & pepper...yummmmmm

2 tbs. flour
simmer lightly until it cooks for a minute then slowlyyyy whisk in 2 cups milk, turn heat up a bit to make it simmer and completely thicken. Add 1 1/2 cup velveeta cheese, stir until melted. Add about 4 drops of franks hot sauce, not too much this is for flavor, not heat. In another pot, cook half package of elbows. You can throw in some diced jalepeno peppers into the cheese sauce if you like nacho flavor. Drain elbows, add to cheese sauce. Now you can add some chopped broccoli if you like, or green peas, or even a tablespoon of pimentos. Green veggies go very well with mac n cheese. Diced chicken or sauteed ground beef if you are a meat eater can be added. That is the easy stove top method.

Mac and cheese is a very healthy dish in and of itself. It is loaded with calcium and most children love it. I am assuming that you are talking about is the "blue box" type of instant mac and cheese, but at the same time, mac and cheese is relatively simple to make on any level -- even from scratch. As for what to add - add broccoli, green beans or even asparagus. As for meat items, you can add hot dogs, cooked chicken (the kind that one can buy in supermarkets all pre-cooked kind; but you can certainly be creative, based on flavor, likes and dislikes. You can add balogna, salami, pepperoni and any meat that you like...or any veggie that is of interest to you. Just remember, mac and cheese is quite bland and adding flavor always means adding taste.

I like any of the smoked sausages, sliced into medallions. I also think that some broccoli and chicken mix well with it.
I've also heard of using Mac & Cheese as the base for tuna casserole with some peas. Also, ground beef or chili are both good choices.
Here's my favorite:
Kielbasa (or your favorite sausage), sliced into medallions, with mushrooms, sauteed together a little, and then mixed into the Mac & Cheese.

i make a mac & cheese cassaroll
your regular mac& cheese and add a can of mixed veggies and a can of green beans pour that in a baking disk top with slices of cheese and rounds of smoked sausage and bake until cheese is all melted and meat looks done and crispy

Try adding a small can of Tuna and 1/2 can of Cream of Mushroom soup for a basic Tuna/Noodle casserole. You can add veggies according to your taste.

Dice up some ham steaks
Pan fry them in butter until they're golden brown
Mix into mac & cheese!

I have one kid that loves hamburger added to mac and cheese and the other won't eat it unless it has tuna added to it. I've also seen people add hamburge and rotel tomatoes to it.
