Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
Black Bean Soup
Black bean soup is a great side, or main course, to a Texas-style or mexican meal. The best black bean soup is made with dried black beans, rather than canned. Be sure to pick through the dried beans carefully to remove any split kernels or tiny rocks that sometimes get mixed in.
•1 pound dried black beans
•1/4 cup olive oil
•1/4 pound bacon
•1/4 pound diced ham
•4 onions, chopped
•4 garlic cloves, minced
•3 stalks celery including leaves, chopped
•1-1/2 cups uncooked brown rice
•1 teaspoon cayenne pepper
•2 teaspoons ground cumin
•3 quarts chicken broth
•1/4 cup dry white wine
•1/2 cup dry sherry
Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside.
Pour oil into a large soup pot. Add the bacon, ham, onion, garlic and celery. Cook at high simmer until vegetables are soft, about 30 minutes. Add beans, rice, seasonings, and broth to soup pot. Bring to a boil; reduce heat, cover and simmer 2-1/2 to 3 hours.
Let soup cool; put through the blender a little at a time, until smooth. Return to soup pot; reheat on low about 45 minutes, adding wine and sherry. Serve hot.

Throw a roast in a crock pot wit 2 cup of water and lipton onion soup. Cook on high all day One day you have pot roast and instant mashed potatoes You can make gravey out of the soup the roast was cooked in. or buy some
Then later you can have Hot roast beef sandwiches with gravey
Still have some left BBQ Sandwitches shred the meat and mix with open pot and ketup or get some manwich serve on buns

Roast a few whole chickens. Leftovers can be served in quesadillas with a green salad, chicken divan casserole ( cubed chicken, raw broccoli florets , can of mushroom soup and curry spice if you like in oven for 30 minutes) chicken club sandwiches, stuffed peppers ( cooked chicken mixed with salsa and rice; stuff peppers with mixture, top with cheese, bake for 30 min ), quick version of chicken creole ( chicken cooked with rice and tomatoes).....Millions of recipes with cooked chicken out there!

Have lots of leftovers from Sunday Roast dinner and on the Mon. and Tue. either have the meat turned into another dish or have the left over vegetables turned into another dish. So many alternatives

Remember girls - - GUYS do NOT like caseroles. No matter what they say to "keep the peace" ::::::: Guys do Not like caseroles. We don't want out food mixed together like it has been pre-digested for us. We don't like it. Trying to plan leftover "weeks" is really pretty dumb. You would accomplish the same by cooking 3 meals each night on the weekend and packaging two to be quick fixed during the week. Pre-planning leftovers is another thing a Guy Hates. Why think in the "stupid" box that came about with the advent of "caseroles". News Flash - We hate them. Get the best guys in the best mood with a little pre-planning that takes you to the same place.

I would say a nice large pan of lasagna,,,,,I have been known to make a lazy lasagna too,,, all the same ingredient, just all thrown into a pot and mixed up. Instead of lasagna pasta, I used rigatoni.

We do this every weekend. It usually ends up being pasta, chili, stew, soup, or meatloaf. Sometimes I get ambitious and make tuna casserole or lasagna rolls. Occasionally, I get REALLY ambitious and do stuffed peppers or cabbage rolls.
Just a few suggestions. :-)

Make a big pot of curry and rice
A big pot of stew
A pot of pasta sauce ( Spaghetti cooks fast).
They freeze well and can be heated quickly on the micro
