Good luck on your new diet!! Here are some salad recipes I found for you...they all sound so good...I'm going to be eating salad for a week now too!!

Spinach, Tomato & Basil Salad

1-1/2 cups torn spinach leaves
2 small tomatoes, cut into large chunks
1/2 cup peeled cucumber chunks
2 thin slices red onion
1/4 cup KRAFT Sun-Dried Tomato Vinaigrette Dressing
1/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
2 Tbsp. chopped fresh basil

PLACE spinach, tomatoes, cucumber and onion in small bowl.
ADD dressing, cheese and basil; toss lightly.
REFRIGERATE 30 min.

Grilled Mediterranean Chicken Salad

2 slices Italian bread
1/4 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing, divided
2 small boneless skinless chicken breast halves (1/2 lb.)
1/2 cup cherry tomatoes, halved
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
2 Tbsp. chopped fresh basil
4 cups lightly packed baby spinach leaves
1/4 cup thinly sliced red onions

PREHEAT grill to medium-high heat. Brush bread slices with 1 Tbsp. of the dressing. Brush chicken with 1 Tbsp. of the dressing.
GRILL chicken 5 min. on each side or until cooked through (170°F). Meanwhile, grill bread slices 1 min. or until lightly toasted on both sides, turning over after 30 sec.
MIX tomatoes, cheese and basil; set aside. Toss spinach and onions with remaining 2 Tbsp. dressing; spoon onto serving plate. Top with cooked chicken and the tomato mixture. Serve with the bread.

Easy Greek Tomato and Cucumber Salad

2 cups chopped cucumber (about 1 large)
2 medium tomatoes, cut into chunks
1/2 cup coarsely chopped green peppers
1/2 cup thinly sliced red onions
1/2 cup ATHENOS Traditional Crumbled Feta Cheese
1/4 cup KRAFT Greek Vinaigrette Dressing
1/2 tsp. grated lemon peel

TOSS all ingredients.
SERVE immediately. Or, cover and refrigerate until ready to serve.

Barbecued Chicken Caesar Salad

1/2 cup KRAFT Classic Caesar Dressing, divided
4 small boneless skinless chicken breast halves (1 lb.)
1 head romaine lettuce, torn into bite-sized pieces
1/2 cup croutons
1/4 cup OSCAR MAYER Real Bacon Bits
1/4 cup KRAFT 100% Grated Parmesan Cheese

POUR 1/4 cup of the dressing over chicken in shallow dish. Refrigerate 20 min. to marinate. Drain; discard marinade.
PREHEAT grill to medium heat. Grill chicken 10 to 12 min. or until cooked through (170°F), turning after 5 min. Cut into thin slices.
TOSS lettuce with remaining 1/4 cup dressing, chicken slices, croutons, bacon bits and cheese.
Substitute
This salad is just as delicious made with KRAFT Ranch Dressing.

8 cups torn romaine lettuce
3 cups sliced cooked chicken breast (about 3/4 lb.)
2 cups cherry tomatoes, halved
1/2 cup sliced red onions
1 cup KRAFT Natural Sharp Cheddar Cheese Crumbles, divided
1/4 cup KRAFT Ranch Dressing with Bacon
2 slices OSCAR MAYER Ready to Serve Bacon, crumbled

TOSS lettuce, chicken, tomatoes, onions and 1/2 cup of the cheese in large bowl.
ADD dressing; mix lightly.
TOP with remaining 1/2 cup cheese and the bacon.

1 cup sliced mushrooms

1/4 cup KRAFT Balsamic Vinaigrette Dressing
1/4 cup PLANTERS Pecan Pieces

TOSS spinach, chicken, oranges, mushrooms and bacon bits in large bowl.
DRIZZLE with dressing just before serving; toss lightly.
SPRINKLE with pecans.

1/2 cup sliced avocado
1 tsp. lemon juice
3 cups baby spinach leaves
1 small blood orange or naval orange, peeled, cut into sections
1/4 cup KRAFT CATALINA Dressing
3 Tbsp. orange juice
2 Tbsp. PLANTERS Pecan Halves, toasted

TOSS avocado and lemon juice in medium bowl. Add spinach, orange sections, dressing and orange juice; toss lightly.
SPOON onto 2 serving plates.
SPRINKLE with pecans just before serving.

Citrus Salad Dressing

This tart, sweet salad dressing is wonderful on dark, leafy salad greens like romaine or leaf lettuce tossed with orange segments, black olives and red onion slivers.

Ingredients
1/3 cup Fresh orange juice
2 tablespoons Balsamic vinegar
1 tablespoon Extra-virgin olive oil
Salt and black pepper to taste

Preparation
Whisk all the ingredients together or combine in a small jar and shake well. Keeps in the refrigerator for 2 days.

Make sure you buy a variety of lettuce, like romaine, ice burg, arugula, spinach, and dandelion. They all have different flavors, some tend to be spicy, and some are earthy and nutty. You can mix nuts, even fruits, with your salads.

The healthiest of salads become fattening when you kill it with dressing. Make your own at home. Use olive oil, red wine vinegar, and/or lemon.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Well first of all-Good for you! so many people don't get enough of their vegies and salads are agreat and tasty way to accomplish just that! You should definately check out vegweb.com ! try to stay away from fried ingredients, sweet ingredients, cream yingredients and/or too much oil and/or salad dressings

a typical caesar salad has as many if not more calories than a BIG Mac, dont let the title "salad" fool you into thinking its healthy

my 2 favorite lite salads:
(both of these contain feta cheese - it contains a little fat but packs a HUGE flavor punch, so you don't need so much dressing).

Greek Makes-Its-Own-Dressing Salad
mix chopped bell pepper, chopped green onion, crumbled feta cheese, chopped cucumber, chopped light ham, 1 tsp lemon juice, 3 tbsp balsamic vinegar, and 1 tbsp. oil. cover and refrigerate for at least 1 hour. the liquids from the cheese and veggies will mix with the vinegar and oil and make a great dressing, with all the toppings mixed in. spoon the liquid and toppings over your choice of greens for a great salad.

Super-Yummy Salad
baby spinach, field greens, halved seedless red grapes, walnuts, chopped pears (rub with vinegar to keep from turning brown), feta cheese. dress with olive oil and balsamic vinegar to taste.

These are two of my favorite:

Romain lettuce, tomatoes, feta cheese and Italian dressing, as a base, and you can add other stuff to taste.

Tuna, lite mayo(not a lot) to the tuna and mayo add, some mixed veggies. you can place the tuna and veggies over lettuce, no dressing needed.

I prefer just a sprinkling of lettuce, spinach, snap peas, onion, sprouts, black olives, and fresh grilled tuna steak cut up on top.
