Because it's bad for you. The worse it is for you, the better it tastes. Now I just need to figure out why food doesn't taste that good with arsenic in it....

Because when we were all cave men and cave women, food that tasted like that had the most calories and allowed those people who ate it to store energy for when there was a famine. Those people survived better and passed their genes on to us.
So you could say that we are programmed to think that it tastes good. The same goes for sugar.
Today, the opposite is true. You live shorter lives if you eat a lot of sugar and fried foods. However, these health problems usually happen after you have had children so it does not effect the gene pool.

It is a proven fact that fat just tastes good. It is the most tasty thing out there! Sadly it is also the most unhealthy thing out there....but anything is okay in ration, I say, as long as you get plenty of all the healthy stuff!
P.S. olive oil is a GREAT alternative, it tastes sooo good, and has the "good" fats, monounsaturated.

I would imagine it's because the frying process does something to the taste profile of foods that stimulates the "feel good" taste buds on our tonge and satisfies the "feel good" part of our brains

It's the fat in the grease. Plus, I think most people are addicted to crunchy foods and snacks. Fat adds flavor to everything. Did you notice that when something is labeled "LOW FAT" it usually has no flavor.
