my boyfriend is coming over this weekend for dinner. he wants me to cook for him again. last weekend i cooked chicken parm heros. it was delicious. he loved it!. well, thats all i am really good at. dose anyone have a delicious recipe i can make that is quick and very easy? nothing with rice.

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.

Bake for 45 minutes; drain any residual fat if necessary.

Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Crab Quiche
Serves 6

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked
3/4 Cup Mexican Style Cheddar Cheese, shredded
1/2 (8 oz pkg.) Cream Cheese, cut into 1/4'' cubes
1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry.

What about make your own pizza? I did that once and it was great! We had so much fun just assembling them.

There's also the old stand by ... Spaghetti

How about Fajitas? They're quick and easy.

Marinate you meat over night, you might want to slice it before, but it's not really necessary. About 30 minutes before you're ready to cook through in some sliced onion & pepper. I've also sliced fresh mushrooms and added them about 1 hour before. Cook in a skillet over med/med high heat until the meat is done. While it's cooking prep your other ingrediants: cheese, sour cream, tomatoes, salsa, tortillas. I usually reserve 1/4 cup of the marinade and the last minute or two throw it in to give a nice sizzle and just let it cook until I'm ready to serve it. You can also open a can of refried beans and warm them in the microwave right before you warm the tortillas. It usually takes about 30 min to cook everything. You could have a salad on the side, or chips and salsa. I usually buy the marinade and mix it with the appropriate amount of vinegar and oil.

My kids love this and it just something I threw together oneday.
1 box of AuGratin potatoes - make as directed on box and place in a baking pan.
1 Lb. of Ground beef cooked and drained - add to the potatoes and mix it around.
1 Small bag of frozen Broccoli - mix it in with the other and pop it in the oven. If you don't like broccoli use french style green beans, my kids like the broccoli.
The last 10 mins I place slices of cheese on top just to make it real cheesy.

If you have a crock pot you could also get a beef roast, can of mushroom soup, dry onion soup mix, and potatoes, carrots, peas etc. and throw it all together and let it go till time to eat. Usually 6 or mor hours, so all you would have to do it mix the soups add a little water, put the meat in and whatever veggies you want and let it cook all day. Real easy.

•2 tablespoons olive oil
•2 cloves garlic, finely chopped
•4 skinless, boneless chicken breast halves - cut into strips
•2 cups fresh spinach leaves
•1 (4.5 ounce) package dry Alfredo sauce mix
•2 tablespoons pesto
•1 (8 ounce) package dry penne pasta
•1 tablespoon grated Romano cheese

DIRECTIONS:
1.Heat oil in a large skillet over medium high heat. Add garlic, saute for 1 minute; then add chicken and cook for 7 to 8 minutes on each side. When chicken is close to being cooked through (no longer pink inside), add spinach and saute all together for 3 to 4 minutes.
2.Meanwhile, prepare Alfredo sauce according to package directions. When finished, stir in 2 tablespoons pesto; set aside.
3.In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente. Rinse under cold water and drain.
4.Add chicken/spinach mixture to pasta, then stir in pesto/Alfredo sauce. Mix well, top with cheese and serve.

SAFFRON ORZO WITH ASPARAGUS AND PROSCIUTO
Yield: 6 servings

4 Tablespoons butter (1 /2 stick)
2 ounces thinly sliced prosciuto, cut into thin strips
1 1 /4 Cups Orzo (about 8 ounces)
3 Cups low-salt chicken broth
1 /2 teaspoon (loosely packed) saffron threads, crushed
1 pound slender asparagus, trimmed, cut into 1 /2" pieces
1 /4 Cup grated Parmesan Cheese
Parmesan Cheese Shavings, Optional

1. Melt 2 Tablespoons butter in a large, non-stick skillet over medium-high heat. Add prosciuto and saute until almost crisp, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.

2. Melt 2 Tablespoons in the same skillet over high heat. Add Orzo; stir 1 minute. Add broth and saffron; bring to a boil. Reduce heat to medium-low, cover, and simmer until orzo begins to soften, stirring occasionally, about 8 minutes. Add asparagus; cover and simmer until tender, about 5 minutes. Uncover and simmer until almost all of the liquid is absorbed, about 1 minute. Remove from heat.

3. Mix in prosciuto and 1 /4 cup of the grated cheese. Season to taste with salt and pepper. Transfer to a large bowl. Garnish with the Parmesan shavings.

MEXICAN CHICKEN CASSEROLL

1 lb of diced boiled chicken breast
1/2 can of cream of mushroom soup
1/2 can of cream of chicken soup
1 can of rotel tomatoes with chilis
1 8 oz bag of shredded mexican style cheese seperated
6 corn tortilas

mix 1st 4 ingredients in a bowl and add 1/2 of the cheese with it
spray the bottom of a 9x13 cake pan with pam cooking spray place tortilas in bottom of pan and cover with chicken mixture and sprinkle top with thr rest of the cheese. bake at 425 for 30-45 min until cheese is melted and casseroll is bubbley 6 servings each corn tortila is a serving GOOD LUCK

How bout BBQ chicken pizza.
Super easy and real tasty.
Buy a premade pizza crust.
Spread on a thin layer of you favourite BBQ sauce.
Top with thinly sliced cooked chicken breast and cheese.
Bake until cheese is melted and crust is browned.

You can also substitute Thai peanut sauce for BBQ sauce.

Chocolate covered pretzel Bites and sticks. Melt vanilla or chocolate almond bark and then dip small pretzels into it. Dip the top ends of pretzel sticks into the almond bark as well. For a great eye appeal take either chocolate, vanilla, or food colored almond bark into a small sandwich bag and cut corner. Drissle this almond bark over the top of bites and sticks. These will dry within 10 minutes so they can be packaged during the same time as made. Good luck!

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
