A chef was visiting my neighbour and made a soup with it but I can't remember what else was in it. Any ideas would be great, it is a huge waste to not know what to make with it.

I am a lovage fan, I use it when I do theme dinners for Ancient Roman Toga Partys, as a way to keep large amounts, dried is ok if your have a dehydrartor, or you can dry it on trays in the oven at low temparture.

Puree it like pesto, just add it to a blender or food processor with a neutral oit like canola or safflower, try freezing the mixture in ice cube trays, then when making stews, soups or other sauces you just drop a cube of the puree in for flavour, at the end, I have always found lovages oils and essence lose alot in long cooking, just like fresh basil

Used plant part
Of this plant, the leaves are most common as a spice. However, root and fruits have the same taste and may be used if a stronger lovage taste is desired; the root is used as a diuretic drug and may be available in a pharmacy, but the fruits are not traded.
Lovage is chiefly needed for tomato sauces, often in combination with oregano; it may be efficiently combined with rue.
