The form of garlic you use has nothing to do with how long a leftover lasts...how soon it is refrigerated and how clean the hands and surfaces are that touch it(both before and after cooking) and how fresh it was before you cooked it are all more important than the form of herb or spice you use ...

Well, powdered garlic usually has preservatives, besides being dryer than the fresh one, so it might last longer unaltered. However, fresh garlic is way better as a nutrient.

Yes, powdered does not have the oils. Less pungent.
