Here are 3 of mine. I think the words pie & cake are used interchangeably where these recipes are concerned. Enjoy!
MISSISSIPPI MUD CAKE #1
When the kids were still at home this was one of their favorites.
2 sticks butter
pinch of salt
1/2 c. cocoa
1 1/2 c. nuts, chopped
2 c. sugar
1 tsp. vanilla extract
4 eggs, slightly beaten
miniature marshmallows
chocolate frosting, your choice
Melt butter & cocoa together. Remove from heat & stir in sugar & beaten eggs; mix well. Add flour, salt, chopped nuts & vanilla extract; mix well. Spoon batter into a greased 9x13x2” pan & bake at 350 degrees F. for 35 to 45 minutes. Sprinkle marshmallows on top of warm cake; cover with your favorite chocolate frosting.
MISSISSIPPI MUD CAKE #2
1 c. butter
1/3 c. cocoa
1 c. nuts, chopped
4 eggs
2 c. sugar
1 1/2 c. flour
ICING:
7 oz. marshmallow cream
1/4 c. butter, melted
1/2 c. cocoa
1 lb. powdered sugar
1/2 c. evaporated milk
1 tsp. vanilla
Preheat oven to 350 degrees F. Melt butter. Stir in cocoa, nuts, eggs, sugar, flour & baking soda. Bake for 30 minutes in 13x9” pan. While still hot spread on marshmallow cream, butter, melted cocoa, powdered sugar, milk, & vanilla. Ice quickly, dries very fast!
MISSISSIPPI MUD PIE
1 3/4 c. flour
1 stick butter
3/4 c. chopped pecans
1 c. powdered sugar
8 oz. cream cheese
12 oz. Cool Whip
1 sm. chocolate instant pudding
1 vanilla instant pudding
3 c. milk
chocolate candy bar, shaved
Preheat oven to 350 degrees F.
1st Layer: Combine melted butter, flour, & pecans. Spread in 9 x 13 baking dish & bake until brown. Let cool.
2nd Layer: Combine softened cream cheese, powdered sugar, & 1/2 of the Cool Whip. Spread over flour mixture, let chill.
3rd Layer: Combine 2 instant puddings with 3 cups of milk. Pour over 2nd Layer.
4th Layer: Top with remaining Cool Whip. Garnish with shavings of chocolate candy bar.

Mississippi Mud Pie Recipe
2 Sticks butter or margarine

1 teaspoon Vanilla extract
1 cup Chopped pecans -- optional
2 cups Sugar
1/2 cup Cocoa
1 1/2 cups Flour
Jar marshmallow creme
Mix butter, 2 eggs and cocoa together.Then, add and mix in vanilla extract, 2 eggs, flour and pecans ,if desired. Put into a greased 11 x 14" pan.Bake @ 350°F for 30 minutes. Remove from oven. While cake is hot,spread 3/4 jar of marshmallow creme in top. Mix together 1 stick butter, 6 tbsp. milk, 1/2 cup cocoa, 1 box powdered sugar, 1 tsp. vanilla extract and 1 cup medium chopped pecans. Spread over marshmallow topping.

INGREDIENTS:
1/4 lb. butter, 1 stick
2 (1 oz. each) squares unsweetened chocolate
3 eggs
3 tablespoons white corn syrup
1 1/3 cups sugar
1 tsp. vanilla
9 inch graham cracker, chocolate or vanilla wafer pie shell
PREPARATION:
In a saucepan, heat butter and chocolate, stirring often, until melted and well blended. Beat eggs; stir in the corn syrup, sugar and vanilla. Add the chocolate mixture to egg and sugar mixture, stirring well. Preheat oven to 350°. Pour filling into prepared pie shell. Bake 35 to 40 minutes, or until top is slightly crunchy and filling is set.
Serve warm with a scoop of vanilla ice cream or dollop of whipped cream.
