Cube Steak Parmesan
This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

INGREDIENTS:
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
2 tablespoons water
1/3 cup crushed saltine crackers
1/3 cup grated Parmesan cheese
1/2 teaspoon dried basil
3 tablespoons vegetable oil
4 (4 ounce) beef cube steaks
1 1/4 cups canned tomato sauce
2 1/4 teaspoons white sugar
1/2 teaspoon dried oregano, divided
1/4 teaspoon garlic powder
4 slices mozzarella cheese
1/3 cup grated Parmesan cheese
DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

CUBE STEAKS
6 or 8 cube steaks
2 med. onions
1 can cream of mushroom or celery soup
2 tbsp. oil or shortening
1/2 c. catsup
1/2 can water
Garlic salt & pepper to taste
Season cube steaks with garlic salt and pepper. In a heavy saucepan brown in oil or shortening, a couple at a time. Place all steaks back in pan and cover with sliced onions. Mix catsup, soup and water and pour over meat and onions. Mix through and simmer partially covered for 40 minutes. Variation: Use beef broth instead of cream soup.

This beef casserole is easy on the budget.
INGREDIENTS:
4 pieces of cubed steak
3 medium potatoes, sliced
3 carrots, sliced
1 medium onion, sliced
1 can cream of chicken soup
1 can cream of mushroom soup
3 to 4 tablespoons butter
PREPARATION:
Layer the cube steak, potatoes, carrots, and onion in a casserole dish. Heat soups with butter then pour over the first four ingredients. Cover and bake for about 60 minutes at 375°.

Cube steaks can be tough, so a nice simmering slow cooking is great. I dredge them in flour, and brown quickly in some olive or veggie oil. Remove from heat (I use an electric skillet) pour in a can of diced stewed tomatoes and scrape the bottom of pan to get a nice brown hue, add your meat back in, add diced carrots, onion, garlic and your favorite seasonings, cover and simmer over low heat until tender. Serve with rice, noodles, or mashed potatoes and a tossed salad. The flour will thicken the tomato gravy and it is yummy over your starch, my family loves it. Great for chuck steaks too, enjoy! Dredge the steaks in flour seasoned with salt, pepper, and paprika and fry. Rough chop one large white or yellow onion and two green bell peppers. Sweat peppers and onion in a little oil for 4-5 minutes. Add steaks back to the pan and pour in two 12 oz. cans of V8 and bring to a simmer. Simmer for 20-30 minutes until veggies are tender. Serve over mashed potatoes.

Brown cube steaks in a little amount of oil. Saute some onions and mushrooms, add them to some gravy, pour over browned cube steaks and cook until meat is thoroughly cooked. Serve with rice or mashed potatoes and a salad or another vegetable.

The easiest way I have always done cube steaks is to mix flour with a little salt and pepper, dredge the steaks (make sure they are coated well) and put them in a pan with a little hot oil.
You can also add a little cummin to the flour mixture for a little snap.
