I've got baby potatoes, a tin of chopped tomatoes, tomatoes, an onion, cheese, bread, milk, eggs and herbs and spices. Don't know what tomake with them, but really want to eat potatoes tonight..

slice te potatoes in oval not too small pieces.
cut the onions in really small pieces
grate the tomatoes until they become like a sauce
cut the cheese into pieces like cubes
take all these and mix them good and add the spices that suit all those ingridients.add salt ,water and oil.
put the mixture in the oven for about 45 min at the temperature that you like.
that is a greek food called "ragou". it tastes great .i hope that the ingredients you have and the quantity you are going to put are suitable for the recipe and that it will taste as the authentic plate

You could make a really good quiche with almost everything that you mentioned. Except for the bread and tomatoes. If you dont know what a quiche is its like a custard pie, but this one would have potatoes, onions, some cheese, and if you could get some spinich that would be awesome. Then with the bread, if its a really crusty bread you could toast it in your broiler, put some olive oil on it and slice the tomatoes, and rub some of the juice in the tomatoes onto the bread. Then sprinkle a little bit of salt and pepper on it, its divine. It may not sound great, but it tastes really good.

Baked Jerk Potatoes

2 pounds Idaho Potatoes, well scrubbed and cut into 1-inch chunks
1/4 cup vegetable oil
1 tablespoons Caribbean Jerk seasoning
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon garlic powder
1/4 teaspoon ground allspice
DIRECTIONS:

Preheat oven to 425?. Place potato chunks into a medium mixing bowl.
In a liquids measuring cup, stir together the oil and spices. Pour spice mixture over the potatoes and stir with a wooden spoon to coat all the potatoes. Transfer the potatoes to a 13x9-inch baking pan.
Bake, uncovered, stirring occasionally, for 30 minutes, or until potatoes are fork tender.

Slice the potatoes and onions and make fried potatoes out of them. Use the eggs, milk, cheese, tomatoes, herbs, & spices to make an omelet. Make toast out of the bread. Give me a call when it's ready.

1 unbaked 9-inch pastry shell
2 cups mashed cooked potatoes
1/2 cup half-and-half
1 tablespoon butter
3/4 cup cream-style cottage cheese
1/2 cup sour cream
2 eggs
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 1/2 cups shredded Cheddar cheese
1/2 cup chopped onion
8 ounces crisp cooked bacon, drained and crumbled
PREPARATION:
Line unbaked, unpricked pastry shell with foil; fill with pie weights or dried beans. Bake at 450° for 5 minutes; remove weights and foil and bake for about 5 to 7 minutes longer, until almost done.
Remove from oven; reduce oven to 425°.

Combine mashed potatoes, cream, and butter; set aside. In a mixing bowl, combine cottage cheese, sour cream, eggs, salt, garlic powder, and peppers; beat with electric mixer on high speed until smooth. Add potato mixture and beat 1 minute longer. Stir in shredded cheese, chopped onion, and bacon. Pour potato mixture into warm pastry shell. Bake at 425° for 35 to 40 minutes, or until golden brown.
Serves 6 to 8.

Spicy potatoes

Ingredients
3 - large potatoes boiled, peeled
1 - onion, chopped in chunks
1” piece - ginger
3 to 4 - flakes garlic
2 stalks - curry leaves
2 - green chillies, slit lengthwise
1 tbsp - coriander leaves
1/2 cup - fresh curds
100 gms - panee, r grated
1 tsp - red chilli powder
1/4 tsp - coriander seeds powder
1/4 tsp - turmeric powder
1/4 tsp. each - cumin and mustard seeds
2 to 3 pinches - asafetida powder
salt to taste
2 tbsp. oil
Method
1. Dice potatoes into not too small pieces, keep aside.
2. Heat 1 tsp. oil in a pan, fry onions till brown in colour.
3. Take off fire, keep aside to cool.
4. Grind onion, ginger, garlic, curds into a paste.
5. Heat oil in a pan, add seeds, allow to splutter.
6. Add curry leaves, chillies, stir and add ground paste.
7. Add all dry masala powders and salt.
8. Stirfry till whiteness is totally gone and oil separates on sides.
9. Add 2 cups water, bring to a boil.
10. Mash 3-4 pieces of potato well by hand.
11. Add all potatoes (mashed and diced) to gravy.
12. Bring to a boil, reduce heat, simmer for 8-10 minutes.
13. The gravy should not be too thick but neither too watery.
14. Transfer to a serving dish, garnish with grated paneer and coriander.
15. Serve hot with puris, bedmi or plain rotis, or steaming hot rice.

A potato - tomato frittita would be great with all these ingredients,

either look in your cookbook at home, or in a web site, they
generally are very similar.
