Keep in mind I have 2 young children, so nothing too exotic.

I had exactly the same thing last night. I butterflied the tenderloin, then broiled it, basting with a mixture of 1/4 Worchestershire sauce, 3/4 unsalted butter, with a crushed clove of garlic added for extra flavor. I broiled it on the top broiler position, 10 minutes for the first side, and about 8 after turning.

It was great.

For the other half of the tenderloin, a couple of days ago, I sliced it into rounds and pounded them thin. I sliced a large onion and sauteed it in butter and olive oil, along with a couple gloves of minced garlic. When the onions were translucent, I took them out and kept them warm, while I browned the tenderloin pieces on both sides. As soon as they were brown, I added back the onions and garlic, along with a couple of fresh garden tomatoes, peeled, seeded, and chopped. I sprinkled fresh basil, salt, and freshly ground plack pepper over the top, put on a cover, and simmered the whole thing for about 15 minutes. I served it over brown basmati rice. Delicious!

Breaded Pork Tenderloin

INGREDIENTS:
1 1/2 pounds pork tenderloin
2 eggs
1/4 cup milk
1/2 cup Italian-style dried bread crumbs
1 pinch garlic salt
2 teaspoons dried oregano
salt and pepper to taste
1 tablespoon vegetable oil

DIRECTIONS:
Slice tenderloin into 1/4 inch rounds. Place rounds between sheets of plastic wrap and pound until thin.
Preheat oven to 325 degrees F (165 degrees C).
Beat eggs and milk together and pour into a shallow dish or bowl. Set aside. In a separate dish or bowl combine breadcrumbs with garlic salt, oregano, salt and pepper. Mix all together. In a large skillet heat oil over medium high heat. Meanwhile, dip tenderloins in egg mixture, then coat with bread crumb mixture. When oil is hot, add coated tenderloin to skillet and fry until golden brown on both sides (not cooked through)!
Place browned tenderloin in a 9x13 inch baking dish lined with aluminum foil. Fry any leftover eggs and bread crumbs together for 'breadings'. Add 'breadings' to baking dish. Cover tightly and bake in the preheated oven for about 45 minutes or until meat has reached an internal temperature of 160 degrees F (70 degrees C).

Most people would tell you to butterfly filet them and cook them as porkchops. Options would be shake-n-bake or bread and fry them.

i would suggest you cut them into small cubes so your children could eat them easily. Cut up some potatoes, carrots, onion and maybe celery. Drop vegetables in boiling water and cook until almost done - - recommend you cook carrots first, then add potatoes, then add onion and celery. Pour into colander to drain. Use pot, add some oil (we like olive oil) to coat the bottom and fry up the pork with salt and pepper. Add 3 1/2 cups of water (or according to package directions) and curry mix - - oh, better go to the store and purchase curry mix first. Add vegetables. Heat until bubbling and let simmer 10 minutes, stirring frequently.

Make a pot of rice. Never done it - - easy! Get rice (not instant!) at the store when you get the curry mix. Pour rice into pot with lid. For you and 2 kids probably no more than 1" in a pot that is 8" in diameter. Run cold water in the pot and swish around the rice looking for any foreign objects. Pour out water. Repeat about 5 times until the water being poured out is largely clear. OK, now stick your finger into the pot with the rice to measure the amount of rice in the pot. Add the same amount of water. Place on stove and bring to a boil, stirring frequently. When the water boils turn the heat to low. Place a towel around the lid and place the lid on the pot - - this allows the steam to escape. Set timer for 20 minutes. When timer goes off lift lid - - rice should be perfectly steamed. Looks kinda wet still? Turn up heat slightly and give it a few more minutes. When ready take off of heat and let sit for a few minutes. Most people will stir the cooked rice to fluff it up a bit.

To serve this meal, put rice in bowl. Ladle curry mixture over rice. Enjoy! Best eaten with a spoon - - again good for kids.

If there is any left after dinner call me. I like curry and rice!

Bake them with rubbed sage, garlic, rosemary and butter.
Bake a couple of nice Granny Smith Apples cut in half and sprinkled with cinnamon and brown sugar
Serve with a gravy made from the pan drippings and Pork Stove top stuffing.
Choose a green veggie that the children will eat.

you can try my fav recipie for pork tenderloin

Pound out the pork(have the kids help they love that)
Roll pork in Flour with a lil salt and pepper in it (to your taste)
Fry in Butter over Med Low Heat with an onion till done
Drain off half the butter(i use 2 sticks when i make this)remove meat, then mix whats left of the butter with a container of sour cream till smooth add meat back to pan and simmer for 30 to 45 mins over med low heat while stirring around every now and then.

if that sounds to exotic for the kids you can just pan fry theirs without all the other steps. good luck and enjoy

You can put them in your crock pot with a can of Cream of Mushroom Soup. Dont add milk or water...Serve over white rice. Not sure what time zone you're in, but it needs to be in there about 5-6 hours before dinnertime. Add Salt and Pepper right at the end.

It is a shame to do anything more than rub the tenderloin with olive oil, garlic, and rosemary and bake it. You can also grill it. Either way, it is quick and delicious.

I like making chicken-fried pork. If you slice it into strips, bread and fry it, it becomes fun finger food for the kids. Serve piping hot with mashed potatoes and creamy corn.... yum!

I would butterfly them and stuff them with rice and forget about it if you are in that big of a hurry. You could get stuffing and put raisins, cranberry or what not in it. If your kids don't like that, I would stuff them chuck full of delicious gummy worms!
