On the 4th of July I attended a cookout and they served a collard green casserole has anyone ever heard of this dish?
If so does anyone know the recipe? This is really good.

there was plenty of smoked ham hocks and onions and tomatos and it was topped with cornbread

COLLARD GREENS - SOUTHERN
STYLE

2 bunches collard greens
1 pkg. smoked pork shoulder, sliced into 5 to 6 pieces
Picnic ham, or any smoked ham
4 tbsp. bacon fat (no other kind)
1 tsp. Accent
1 tsp. black pepper
1/2 c. onions, chopped
1/2 c. green pepper, chopped
2 c. okra, sliced

Be careful and select the most tender big leaves. Inspect and wash greens well. Snip off the tough stems. Then cut the leaves crosswise, about an inch wide and wash again.
Put just enough cold water in pot to cover the smoked ham, and let boil for an hour. Add collards to boiling water. Let cook 30 minutes or until greens shrink.

Stir and add bacon fat, Accent and black pepper.

Allow cook 1 hour until just about done. Then add your onions, green pepper and okra last.

Simmer 30 minutes or until tender.

You must try some vinegar and hot sauce when serving.

Serve with corn bread.

Creamy Collard Casserole

1 can (10 oz) condensed cream mushroom soup
1/4 C milk
3 slices swiss cheese
1 (2 1/3 oz) can French fried onions, divided
1/4 C bacon, cooked and crumbled
2 (15 oz) cans collard greens, drained and squeezed dry

1. In a medium saucepan over med-low heat, mix soup and milk till combined.

2. Add swiss cheese and stir till melted.

3. Add 1/2 can of french fried onions.

4. Stir in bacon.

5. Mix collard greens till well combined.

6. Spread into a 9-in. pie plate that has been coated with nonstick cooking spray.

7. Bake at 350 degrees for 15 minutes.

8. Add remaining french fried onions.

0. Bake additional 5 minutes or until onions are toasted.

What were the predominant flavors? Asking for a recipe in which an ingredient is collard greens is much too vague for a substantive answer. If you can determine what some of the other ingredients and flavors were, you'd be able to research a recipe a bit better.

It would be difficult to narrow down the recipe but I do love to saute collard greens with olive oil and fresh garlic. You chop the greens and cook in the oil and garlic until tender. The stalks can stay tough so I usually cut them out. Love them.
