This was made with unsalted crackers, had milk, eggs and sugar. Does anyone know this receipe?

Cracker Pudding

40 min 10 min prep
1 quart milk (recipe suggests whole milk)
1 cup coconut
1 cup unsalted crackers, finely crushed
1 cup sugar
1 teaspoon vanilla
2 eggs, separated

Mix all ingredients except eggs.
Bring to a boil, stirring often.
Beat 2 egg yolks.
Slowly stir in the yolks to the other ingredients.
Cook on medium to medium-high for 30 minutes, or until thickened, stirring often (mine only took about 20 minutes).
Pour into a glass baking dish (I use a round one).
Beat the 2 egg whites until they peak.
With a spoon, add dollops of the egg whites over the top of the pudding.
The egg whites should not be spread, just dropped by the spoonfuls around the top of pudding.
Broil until egg whites are browned.
Refrigerate until fully chilled.

GRAHAM CRACKER PUDDING
You can use cool whip lite, skim milk and low fat graham crackers for a very low fat desert.

1 large box instant vanilla pudding
8oz container of cool whip
4 cups of milk
graham crackers

Prepare pudding per directions. Gently fold in the cool whip. Layer your dish with the graham crackers and pudding until all the pudding is used up.

Old Fashioned Cracker Pudding

2 egg yolks
1 c. sugar
1/2 c. coconut or more to taste
1 c. crumbled saltines
1 qt. milk

Combine and bring to a boil. Cool. Beat egg whites and put on top. Bake at 450 degrees until meringue turns a golden brown.

Was yo'all being poor youngens? I mean, eating crackers and calling it "pudding"....I think your mama pulled a fast one on ya. Never heard of such nonsense.

Recipe for bread pudding, only replace dry bread with crackers... my mammy made it for me, too, and thanks to you I am making some for dessert tonight. Thanks for the memory jog!
