Stuffed peppers and aubergines:

Cut red/yellow peppers and aubergines in half lenthways (allow half a pepper and half an aubergine per person). Remove seeds from peppers.

Scoop out the flesh of the aubergine, dice and saute in olive oil until golden. Put into a bowl with fresh breadcrumbs, grated parmesan, chopped tomatoes, pine nuts, chopped anchovies, garlic, basil and parsley. Season. Mix well.

Fill the prepared veg with the stuffing.

Oil a large oven proof dish.

Place the stuffed veg in the dish. Sprinkle with a generous amount of parmesan and drissle with olive oil.

Put in a very hot oven for about 50 minutes.

Serve with salad or whatever you fancy.

Grilled Korean-Style Skirt Steak
SERVES: 6
This recipe is a twist on a traditional Korean short-rib dish called kalbi kui. I prefer using skirt steak because it is much easier than butterflying short ribs. The sweet Korean chili paste, called kochujang, is available at Asian markets.
ingredients
1/4 cup soy sauce
3 tablespoons Asian sesame oil
3 tablespoons sugar
3 tablespoons sake or dry sherry
3 medium garlic cloves, minced
2 scallions, chopped
1/2 teaspoon freshly ground pepper
2 1/2 pounds skirt steak, cut into 4-inch pieces
Vegetable oil
1 head of romaine lettuce, separated into leaves, and kochujang, for serving


directions
In a large glass baking dish, mix the soy sauce with the sesame oil, sugar, sake, minced garlic, chopped scallions and pepper. Add the skirt steak and turn to coat. Cover with plastic wrap and refrigerate for 2 hours.
Light a grill. Lightly oil the grate. Grill the steak over a medium-hot fire for about 6 minutes for medium-rare meat, turning occasionally.
Transfer the steak to a cutting board and let rest for 10 minutes, then slice across the grain. Serve the steak with lettuce leaves and chili paste and let diners wrap their own beef rolls.

Spicey lemon chicken stir fry. Soak 3 chicken breasts in lemon and water for about an hour then rinse. Season chicken with hot nando's sauce, thyme parsley and basil plus plenty of black pepper. Chuck in a wok, and when almost done throw in some onion and red/green/yellow sweet peppers. Add a chilli if you think you can handle it!!!

Whilst that was cooking, cook some basmati rice. This will be done before the chicken, so just turn it off. When the chicken is completely done, just chuck in the rice. Add some lemon juice (sounds weird, but it works!!!!), and voila!!!

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

www.allrecipes.com is filled with ideas. I'd say my favorite thing to make on short notice. Is to take chicken and cut into cubes. The saute the chicken with garlic and diced onions. Cook up some noodles (elbow works really well) Then combine the chicken, noodles and add some seasonings of choice Parmesan cheese or other cheese and a can of cream of soup. Stir until heated and serve with garlic home fries...

Here goes....my husband and I made this the other night and fell in love with it! Note: It is a bit tart, so only make this if you enjoy experimenting with flavors. (not TOO tart, or else I would not have liked it.)

Lime Chicken with Pasta

Ingredients:

For the pasta:
1 (16 oz) pkg of dried small pasta shells
3 tbsp. extra virgin olive oil
2 tbsp. butter
1/2 cup Parmesan cheese (finely grated)
2 tbsp. chopped Parsley

For the chicken:
1/2 cup extra virgin olive oil
3 tbsp. butter
1 clove garlic, sliced
4 skinless, boneless chicken breast halves- cut into bitesize pieces
salt and pepper to taste
2 limes, quartered
1/2 cup white wine
1 (14.5 oz) can diced tomatoes

DIRECTIONS:
Cook pasta according to package directions (tip: I add a bit of olive oil in the water to keep pasta from sticking together). Drain, pour pasta into large bowl, and stir in 3 tbsp olive oil, 2 tbsp butter, Parmesan, and Parsley. Keep warm.

Warm 1/2 cup olive oil and 3 tbsp. butter in a large skillet over medium heat. Stir in garlic.

Season chicken pieces with salt and pepper, and place in skillet. Squeeze lime juice over chicken, and you can add some bits of lime fruit to the mixture if desired (make sure no rind gets in there, it will taste bitter). Cover and cook until chicken is white on the bottom (just a couple of minutes). Turn chicken, and pour wine into skillet; cover, and cook until the other side of chicken turns white. Stir in diced tomatoes; cover, and cook about 3 minutes. Serve over pasta.


One other tip. If you happen to be cooking with another person, one of you do the pasta while the other starts the chicken. That way, your pasta is more likely to stay warm.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

A chicken curry is my favorite. Blend garlic onion ginger togerther and fry in a littel olive oil, add turmeric and garam masala, tin of chopped toms. leave on a very low light till oil seperates from rest of mixture. then add chicken leave to cook on low light, beautiful, all ingrediants can be bought from your normal supermarket.
