I have to agree with all the Sapghetti Bol's out there, quick and easy and you can't get it wrong, even if ya do, just sprinkle loads of parmesean cheese over it and it'll taste just as good too.... oh and it always looks like a lovely meal too.

Well not sure the ingredients in your home but a nice one dish casserole (Chicken and rice bake)would do the trick. Less mess to clean up and you can spend some time with the missus.

1 c. uncooked rice
1 can cream of chicken soup, or cream of mushroom
1 envelope Good Seasons Italian dressing mix
2 cups boiling water
2 1/2 pounds cut up chicken or chicken breasts
salt and pepper to taste


Wash and drain rice. Spread in 9 x 13 inch baking dish or 3 quart casserole. Mix soup, Italian dressing mix and water. Stir into rice. Lay chicken, skin side up, on top of rice mixture; season with salt and pepper. Cover tightly with foil and cook for 1 hour at 350°. Uncover and cook for 20 minutes longer; until most of the liquid is absorbed and rice is tender. Put casserole under broiler for a few seconds to brown chicken.
Serves 6 to 8.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Jambalaya - really easy I'm cooking it tonight.

Some chicken and/or smoked sausage (v nice) and/or shrimp and/or anything else you have. Fry in oil, add some garlic, onion, green pepper and celery (if you have it). Spice with 1/2 tsp chlli powder and 1/2 tsp cheyenne pepper. Add tin chopped tomatoes.

In last 20mins, add 3 cups water (or stock) and 1 cup of rice. Bring to boil, stir and simmer until rice cooked. Add more liquid if required but you don't want a soup.

Delish....serve with a little green salad. Make sure you don't under-spice this dish

Quick - if you can, get to a Marks and Spencers (or a Waitrose, if you haven't got an M&S nearby) and get a variety of ready-to-go meals in there. And a salad too - a Greek one is nice, and get some extra feta cheese to crumble and sprinkle across the top. Then go home and pretend you made it all yourself. I recommend the summer puddings for dessert (bish them a bit to make it look like you did it yourself).

If you can't be bothered, make really nice chips at home. Mmmm, lovely chunky fresh-cooked chips are lovely.
