I have these questions:

When did the Jewish stop making sacrifices?

Why don't the Jewish people observe the law as they once did?

Are they still looking for the Messiah?

We are still waiting for the real Messiah.

We still observe the law.

And we do not Sacrifice because the Temple was destroyed.

Some of the answers were on the money, but I want to elaborate a little:

First question:
Jews stopped the animal sacrifice when the second Temple was destroyed by the Romans on 70 AD.
Today, the synagogues are a replacement for the Holy Temple (in Jerusalem) that was destroyed.
Today, instead of animal sacrifice, we have the Tefilla - the prayers that the observant Jews say every day.
In short - instead of Holy Temple in Jerusalem - synagogues all over the world.
And instead of animal sacrifice - unified prayers for all the Jews in the world

Second question
Observant Jews observe the law. Secular Jews do not observe all the laws. I'm a secular Jew. being a Jew is more that a religion, its also culture, history, destiny. I'm a proud Jew but not an observant one. I would say that more than half of the Jews in the world are not observant Jews. The other half do observe the law!!!

Third question
The religious Jews, or observant Jews still wait for the true messiah. the secular Jews don't believe in him at all!!

With the destruction of the Temple, they could not make sacrifices as commanded. Until the Temple is rebuilt (unlikely to happen, study your history and archeology if you don't know why), Pharasitical Judiasm is a pipe dream. Hence the rise of Rabbinic Judiasm.

If and only if the Temple were rebuilt could the old tradition resume.

Romans 2:28 For he is not a Jew, which is one outwardly; neither [is that] circumcision, which is outward in the flesh:
2:29 But he [is] a Jew, which is one inwardly; and circumcision [is that] of the heart, in the spirit, [and] not in the letter; whose praise [is] not of men, but of God.

when Jesus turned everything from physical to spiritual the Jewsish majority did not accept it, even today.

In the old testament(origin of Jewish Culture) there are physical works mentioned with prophecies to be fulfilled

but the new testament works are spiritual works fulfilled and almost all the old testament prophecies fulfilled.

Old testament – question paper & new testament – answer sheet

The generation of Abraham the twelve tribes who were slaves in Egypt – old testament where as the Generation of Christ from twelve disciples who are rescuing people from slavery to sins.

Old testament – children of Israel “ physically Jews from the tribe judah”

New testament- spiritual Jews.

So I can go on to explain the seed of Abraham, the sanctuary, the sacrifices, many prophecies, the law were fulfilled in one & only Christ Jesus.
But the following will explain what is circumcision, today, spiritually means:

Romans 2:28 For he is not a Jew, which is one outwardly; neither is that circumcision, which is outward in the flesh:
2:29 But he is a Jew, which is one inwardly; and circumcision is that] of the heart, in the spirit, and not in the letter; whose praise is not of men, but of God.

Jesus stopped the sacrafice because it is wrong.
They are still under the "laws" all of them because of their
refusal to beleive in Jesus
Just as they missed Elijah's coming cause of heardened hearts, they have also missed the arrival of Jesus Christ.
