Those were Iranian pistachio pre-1979 hostage fiasco.
The nuts not the hostages were dyed red to cover up the imperfections when the had fallen from the tree and hit the ground.
Undyed pistachios never hit the ground cause shaker machines catch them and send them to be packaged.

I think they thought it was more appetizing to see red nuts
They quit b/c people didn't want to eat a bunch of red food coloring, and liked the nut for the flavor, not the color.

cuz the red dye was cheaper then other colors of dye, thats why they switched to colorless or green.
