Impossible Cheeseburger Pie
INGREDIENTS:
1 pound ground beef
large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese
(4 ounces)
1/2 cup Bisquick
1 cup milk
2 eggs
DIRECTIONS:
Heat oven to 400°. Grease 9-inch pie
plate. Cook beef and onion until beef
is brown; drain. Spread in pie plate;
sprinkle with salt and cheese. Stir
remaining ingredients until blended.
Pour into pie plate. Bake about 25
minutes or until knife inserted in
center comes out clean. Cool 5 minutes.

Easy Cinnamon Coffee Cake
2 cups Bisquick baking mix
2/3 cup milk or water
2 Tbsp. sugar
2 eggs
Grease round pan, 9" x 1 1/2". Mix above ingredients, b eat 30 seconds. Spread in pan; sprinkle with Streusel Topping.
Streusel Topping:
Mix 1/3 cup Bisquick, 1/3 cup packed brown sugar, 1/2 tsp. cinnamon and 2 tbsp. firm margarine or butter until crumbly.
Bake at 375ºF for 18 to 22 minutes or until toothpick inserted in center comes out clean. Serve warm with butter. 8 servings.

Sugar Pie's Easy No-Fail Corndogs
2 lbs. hot dogs
1 Tbsp. flour
2 ¼ cups Bisquik
5 Tbsp. yellow corn meal
1 tsp. onion powder
2 eggs
1½ cups milk
Prepare hot dogs by laying on paper towels and rolling to dry them. Dust lightly w/ 1 Tbsp. flour, rolling hot dogs to coat evenly. Shake off excess flour. Insert bamboo skewers half-way into each hot dog.
Whisk all batter ingredients together in a tall pitcher (this facilitates coating).
Dip floured hot dogs into batter, sealing at stick. Fry 2-3 at a time in 375ºF oil (or Fry Daddy). Rotate regularly to evenly brown, or submerge w/ spider for a minute or so. Overall cooking time is generally under 2 minutes. Remove from oil and drain on a wire rack placed over a cookie sheet.

Edna’s Armadillo Eggs
Mix together:
½ lb. Owens Hot Sausage
½ lb. shredded Monterey Jack cheese
1½ cups Bisquick
And enough water to be able to pat these into little pancakes.
Seed a whole pickled jalapeno pepper and place a small piece of monterey jack cheese inside the pepper. Place stuffed jalapeno on top of a little pancake and close pancake to seal, forming into the shape of an egg.
Brush eggs with an egg wash (1 egg beat with 1 Tbsp. water). Bake in a slow oven (about 325ºF) for 25-30 minutes. Serve warm or at room temperature.
