They are so sour they become unedible.How can I get round this .

I mean to cook the plums not the trees.

1. Wash plums.
2. Place in saucepan
3. Add 8oz sugar
4. Add 2 - 3 pts water - heat. DO NOT BOIL!!!
5. When plums 'soft' - take out and allow to cool. Cut in half and remove stone.
Place plum halves in oven proof dish - pour (SOME) of sugar water over plums.
6 Make Victoria Sponge mixture and add (small amount) almond essence to it.
7. Pour sponge mixture over plums
8. Sprinkle mixture with almond flakes
9. Cook in oven at 180oC (Gas Mk4) for approx 30 mins (or until sponge cooked through.
10 serve hot with custard.

The skins make them sour so take them off and then add some sugar and just use the flesh of the plum for the pie.

Yes use more sugar , but next spring water the trees more than usual ,I know about the draught etc.,start watering before the summer than you should have sweeter plums in late summer !

Take the skins off, you do this by putting them in hot water first for a few seconds and then put them straight into ice cold water, the skin should peel off easily, best if you split the fruit first I think

The skins has a natural yeast on them which can have a bitter/barley or sour taste. Great for Wine making, not so good for Jam.

Peel, stone and slice them..leave them overnight in sugar and cinammon mixture..then cook your pie the next day!!
