Whenever I put extra mature cheddar on toast it seems to wimp out on me

Some cheeses, like cheddar, don't handle melting very well; the oils (fats) separate out, resulting in A) flavor loss, and B) a gooey mess. You might try a cheese that's better suited for melting, like emmentaler or fontina.

If you really like cheddar, though, try melting it separately. Slice the cheese you're going to use, and put it in a microwave-safe bowl. Cover the bowl with plastic wrap, and microwave it for 20 seconds or so (high power). You may have to adjust the time, depending on your microwave.

The cheese will get very soft and bubbly, and some of the fat will separate out. But before you put it on your toast, give it a good stir with a fork. That should re-incorporate most of the fat. Then, just pour it onto your toast.

We are often sold cheese that is made from hydrogenated oil rather than milk in this country. Then - our cheese that is made from milk is so inferior in quality. We also have no qality control in ANY American industry - as when the production line breaks, the supervison says "Run It Anyway" as they want profit (Greed). Buy only high quality imported cheese if you are going to melt or cook with it. Otherwise, your sandwich tastes like oily slime.

It's disappointing. Try extra extra extra mature Cheddar- see you can catch one of those dudes.

It probably has something to do with the temprature killing things in the cheese... try wensleydale, I really enjoy the taste of melted wensleydale.

Have you tried smoked cheddar melted, now that doesn't lose anything.

I think I learnt is school that it is the molecules, but I dont think it loses its flavour.

because when you cut the cheese it lets the smell out of it...

under heat it just taste different, I don't think it alters the taste
