You can make a swiss roll.


Ingredients
4 size 2 eggs, at room temperature
100g/4oz caster sugar
100g/4oz self-raising flour
For the filling:
approx. 4 tbsp strawberry or raspberry jam



Method
1. Preheat the oven to 220C/425F/Gas 7. Grease and line a 33x23cm/13x9in Swiss roll tin with greased greaseproof paper.
2. Whisk the eggs and sugar together in a large bowl until the mixture is light and frothy and the whisk leaves a trail when lifted out. Sift the flour into the mixture, carefully folding at the same time. Turn the mixture into the prepared tin and give it a gentle shake so that the mixture finds it's own level, making sure it spreads evenly into the corners.
3. Bake in the preheated oven for about 10 minutes or until the sponge is a golden brown and begins to shrink from the edges of the tin.
4. While the cake is cooking, place a piece of non-stick baking paper a little bigger than the size of the tin on to a work surface and sprinkle it with caster sugar.
5. Invert the cake on to the sugared paper. Quickly loosen the paper on the bottom of the cake and peel it off. Trim the edges of the sponge with a sharp knife and make a score mark 2.5cm/1in in from one shorter edge, being careful not to cut right through.
6. Leave to cool slightly, then spread with jam. If the cake is too hot the jam will soak straight into the sponge. Roll up the cake firmly from the cut end.

I made a giant Chip - wich, which was very cake-like and didn't contain eggs

I used a cookie recipe and baked the whole batch of dough like a cake! Then filled the middle with ice-cream!!

4oz margarine
3oz Soft brown sugar
60z Flour
2tbsp Golden Syrup
2 tbsp milk
+ whatever you want as bits - i.e choc chips
500ml ice cream of your choice

Soften the butter by mixing, add sugar and mix - then fold in everything else!

There are many boxed cake mixes that don't require eggs..
If you go to the store to buy one,you might as well buy eggs also.
Search your cupboards,or when you do go shopping ,read the back of the cake boxes..some of the cake mixes don't require you to use eggs.
I use muffin mixes that only require 2% milk,the egg must be already in the mix.

crazy cake

INGREDIENTS:

* 3 cups all-purpose flour
* 2 cups white sugar
* 1 teaspoon salt
* 2 teaspoons baking soda
* 1/2 cup unsweetened cocoa powder
* 3/4 cup vegetable oil
* 2 tablespoons distilled white vinegar
* 2 teaspoons vanilla extract
* 2 cups cold water

DIRECTIONS:

1. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three holes. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir with fork until mixed but no too much.
2. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

Chocolate Cake
(It's meant to be irresistible, but I don't know - I've never tried it.)

125g creamed coconut
50g cocoa powder
400g self-raising flour
1 level tsp. baking powder
large pinch of salt
225g light brown soft sugar
200ml sunflower oil
icing sugar for dusting (optional)

1. Oil and line 1.7 litre/3 pint loaf tin.
2. Pour 650ml boiling water over coconut and stir until it dissolves.
Leave to cool for 30 min.
3. Sift cocoa powder, flour, baking powder and salt into a bowl
and mix together with the sugar. Make a well in the centre and
pour in the coconut mixture and the oil. Beat
ingredients together thoroughly to make a smooth, thick batter.
4. Pour into prepared tin and bake in oven at 180C for 1 1/4 hours
or until well risen and firm to the touch. Leave to cool in tin for
10 min., then turn out onto wire rack and leave to cool
completely. Dust with icing sugar before serving.

sorry but you didnt say much about what you wanted to make, is it a dessert dish or maybe a breakfast meal. i always bake a casserole and i never use eggs in them. try a good tuna noodle casserole, no eggs and its delicious. try a baked potato. no eggs in that either. or maybe a cheese cake, i have yet to see a cheese cake recipe using eggs.

The 'Viscount Trenchard' cake. My aunty used to make them, and I was always told it was a Viscount Trenchard, and it was made without eggs. Beyond that , I have no idea of what it was all about. It went well with a cup of tea though.

You can replace the eggs with Appesauce, or sourcream or tofo!!
3 Lage eggs is about a half cup of apple sauce.
