Human life falls under two grand divisions and they are Fortunes and Misfortunes or you can call them Sukha and Dhukkha in Sanskrit. In India, it is beleived that by worshiping God Ganeshji, Sukha is increased and Dukkha is reduced hence God Ganesha is also called Sukha Kartha.

we usually start any good work by workshipping god ganesh and it is expected that everything will go right and bring happiness i.e,sukh,hence ganesh is also known as sukhkarta

Vakra kunda mahakaya surya kodi samaprabha - "nirvignam kuru mey deva" - this is the prayer. When Lord Ganesha removes the obstacles (vignam) from our path, he comes to know as "sukhakarta".

God Ganesha helps all mankind and takes care of the wellbeing (Sukha) of all. Since He is the Source (Karta) of all wellbeing, He is called as so.
