The other answers pretty well covered it but one of the leading factors in wine production would be the climate.
Ice Wine is made from specific berries that must be picked at the first frost of the season.
Aussie, Californian, Italian and Canadian wines all have different levels of sucess due to individual drinkers pallats and the fact that each region has different climatic factors that aid or detract in the production of the wines.

everything affects it. soil conditions matter muchmore than you would think. same w/ coffee there are only 3 species of coffee beans. it all comes down to where it is grown and how it is roasted. same deal with wine just more factors and more types of grapes.

Market demand. Pinot Noir is in crazy demand right now, Cab Sauv you can't hardly give away.

Hard part is the market changes faster than the growers can keep up.
